Back in the mid-80's, I worked for a German chef and Jager Schnitzel was one of his most popular dishes. I learned how to make it from him. He used pounded Veal, which was floured, but not breaded. Sauce Equal parts Diced Onions and sliced Mushrooms. Fry in a mix of oil & butter. Fry the Veal in the pan with the Onions & Mushrooms. When about 90% cooked, de-glaze the pan with some dry white wine. Add Whipping Cream. Allow to boil and reduce until thickened. Add dry Tarragon. Add a touch more butter to finish, and serve. Serve with Egg Noodles.

There are two different ways to make jaeger sauce. The dark one and the creamy one. Both are authentic and are served in Germany. I am just about to publish the dark jaeger gravy next week on the website in case you are interested. You can also find breaded and unbreaded schnitzel for jaeger schnitzel. There are basically 4 different combinations. I love them all :)
The video and recipe do not match up! Your not showing the wild mushroom mix, the tsp of garlic paste, you only mention vegetable broth and nothing about chives!!!! I am making it like you do in the video but was wondering why you didn’t use the ingredients you mention on your website? But it looks yummy!!!

You are right about the Onions - Probably should be 1 large Onion to a pound of Mushrooms.
