Strawberry roll, Eggless with strawberry flavored cream cheese, without frosting.

    This strawberry roll is scrumptious and an absolute delight for a summer brunch or for any day!
    The strawberry jam is lush, robust, bright and glorious with its fruity flavor! On its own, it can be swirled with yogurt, spread on toast or pancakes. For this recipe, I am using it as a filling and have added to the cream cheese for a beautiful vibrant pink, red color and for that extra deliciousness!!
    This roll is light, with balanced sweetness, in the bread, jam and cream cheese. No sugar frosting in the cream cheese, only small amount of condensed milk, mixed with unflavored full cream milk. I prefer the cream cheese with a lower degree of sweetness.
    You can load on the jam and cream cheese, there is no hold back. As you prefer!
    They are best served warm, the best part of the roll is the gooey, moist center. Hey, if you have left overs, simply pop them in the microwave to get that nice gooey moist taste again. I doubt you will have leftovers because they are so good! 😊
    Here is the recipe:
    Bread Dough
    - 2 1/2 cup all purpose flour
    - 1 tbsp honey
    - 1 cup warm milk
    - 1 tsp yeast
    - 1 tsp salt (unsalted)
    - 1 tsp vanilla
    - 3 tbsp butter melted
    Strawberry Jam
    - 20 strawberries
    - 1/4 cup sugar
    - 1 tsp lemon juice
    Cheese Cream
    - 1/4 cup cream cheese
    - 1tbsp condensed milk or heavy cream
    - 1 tbsp strawberry jam
    - 1/4 tsp vanilla
    Spread on dough: butter, sugar and strawberry jam
    Method
    - To a bowl, add flour, yeast and salt
    - Mix well dry ingredients
    - To a cup of arm milk, add melted butter, honey and vanilla extract
    - Add liquid mixture to the dry ingredients
    - Mix well. Till combined into a shaggy dough
    - Cover and rest dough for 10 minutes
    - After 20 minutes, knead dough for 2 to 5 minutes into a smooth dough
    1st Proofing
    - Place the dough in to bowl
    - Cover it
    - Put in a warm place eg : inside oven
    - Proof for 1 hour or until dough doubles in size.
    Meanwhile, make strawberry jam:
    - In a pot add strawberries
    - Sugar
    - And lemon juice
    - In the beginning simmer strawberries on low heat
    - Then turn heat high, bring to a rapid boil
    - Keep stirring to avoid burning mixture on the bottom
    - Mixture will reduce in volume and thicken
    To test jam, spoon a little on a chilled saucer, if it is not runny it is done.
    Allow jam to cool then store in a sterilised jar and refrigerate to keep it cool.
    After 1 hour or once Dough has doubled in size:
    - Transfer it to a lightly floured surface.
    - Degas the dough, roll into oblong shape
    - Spray or spread butter
    - Sprinkle sugar lightly
    - Pour jam and spread ( Do a light spread as the jam leaks ). Rest of the jam, refrigerate and use as a spread.
    - Roll dough, starting from long end. Roll tightly
    - Then cut into preferred slices
    - Set on a tray
    - Then 2nd proofing for 1 hour or till doubles in size
    Next prepare cream cheese:
    - Mix condensed milk with unflavored milk,
    - Add to cream cheese.
    - Add strawberry jam, for robustness in color and flavor
    - Whisk or mix
    - Add vanilla extract
    - Mix till all well combined
    - Then refrigerate
    After 2nd proofing : Bake @ 350°F for 30 minutes
