The performer needs to be able to "audiate" the note (that is, hear the correct note in your head before you produce it) but this is true of every vocal soloist, violinist, clarinet, trombone, or any other tonal non-keyboard, non-fretted instrument. A very few people have perfect pitch, but almost everyone can learn to "audiate" and play any of these instruments, including the theremin.
