what a nice take on a tator tot casserole; avoid waste, freeze your tomato paste after cutting both ends off the can ... press out what you need and put back in freezer in a zip bag.
It all looks so good but the salad and chicken just looked so refreshing and light. There were just so many dishes and deserts during the holidays. Have enjoyed reuben sandwiches on the stove top griddle, grilled chicken salad sandwiches, and some light veggie soups. I just indulged too much during the holidays.I will be making all the recipes when the weather gets a little colder again. We are in the mid 70's right now. I love a good sandwich now and again...I started adding salsa as a condiment. OMGoodness, it takes the sandwich to a whole new level. If you haven't tried it you should! Also love it on a salad instead of using salad dressing.

I made this recipe tonight and it was very good. I did substitute the hamburger meat for Gardein burger. I added corn like you suggested. My husband really liked it. I will add this to my meal plan.

I love fresh salsa mixed into black beans and corn as a side dish. Sometimes I even us it to fill zucchini boats

Thanks, Mel! After the holidays, I find myself dreading dinner time. Two weeks with two teenagers & a husband home from work = one cooked-out mom. One skillet meals are a great way to use pantry staples, have an easy clean up and satisfy the family. Going to try the Tex-Mex meal tomorrow night.

I totally understand your feelings! I LOVE the taco skillet SO much, it really is one of my all time favorites AND you must have been really good to get that Le Creuset!
I love fresh salsa and I'll definitely be trying this LaMexicana Salsa. I can't have a lot of things with preservatives because it causes migraines so this will be a wonderful option for me. I don't really like hot spicy things so I hope the mild isn't too spicy for me.

I love the fresh salsa too! And I can't do a lot of spicy food either and their mild is perfect for me, lots of flavor with out the heat. Hope you love the skillet meals!
This does look like a good salsa, however if you pause the video when she shows the ingredients, it does have preservatives such as sodium benzoate and potassium sorbate. It also contains ascorbic acid. Some FDA studies show when these are combined they are considered a carcinogenic. Just thought I'd let you know.
