INGREDIENTS
⅓ cup olive oil
¼ cup pure maple syrup
¼ cup coconut sugar
2 ¼ cups old-fashioned oats rolled, gluten-free
⅔ cup coconut flakes unsweetened
⅔ cup pecans raw, coarsely chopped
⅓ cup pumpkin seeds raw
⅔ cup dried cherries or cranberries*
INSTRUCTIONS
Preheat oven to 350 degrees.
Add oil, syrup, and sugar to a small to medium-sized skillet or saucepan over medium heat.
Cook for 2-3 minutes, or until the mixture starts to boil, stirring occasionally.
Reduce heat to low and continue stirring for an additional minute.
Pour the sauce over the oats in a large bowl and toss to coat.
Add coconut flakes, pecans, and pumpkin seeds. Stir until well combined.
Line a large baking sheet with parchment paper. Spread granola mixture evenly into the pan.
Bake granola in the preheated oven for 20-22 minutes.
Remove pan from the oven and let sit until it reaches room temperature.
Break apart the granola into pieces and mix in dried cherries. Enjoy!

I’ve been making our granola for 30 years. I put various nuts dried fruits ( after it’s all baked) , dried unsweetened coconut flakes and cinnamon , I’ve used local sourwood honey or org maple syrup with olive oil. Yummy! For years we gave it at Christmas instead of cookies. ( to the granola lovers of course- did not want to waste it on those who might toss in the trash) lol

Can I use honey instead of sugar?
I would recommend using coconut sugar in place of the brown sugar so you keep the same consistency! You can use honey in place of the maple syrup, though! :)
Can I make this without olive oil?
Absolutely! I’d sub another type or oil or butter for the olive oil though.
