  • Potato Scallop with Tartar Sauce
    Ingredients:
    - 3 large Sebago potatoes
    - 1 shallot, finely diced
    - 8 cornichons, finely diced
    - 3 tablespoons baby capers, roughly chopped
    - small bunch of dill, finely chopped
    - 100g mayonnaise
    - zest of 1 lemon
    - 200g plain flour, plus extra for dusting
    - 200g white rice flour
    - 1 tsp baking powder
    - 1 tbsp honey
    - 300ml vodka
    - 300ml lager
    - salt
    - oil for frying (peanut oil recommended)
    Method:
    1. Peel and wash your potatoes, then cut into disks about 1cm thick. Place them into a pot of cold water, season generously with salt, and set over high heat. Cook the potatoes for 5-6 minutes once the water is simmering or until just cooked but still holding their shape. Remove from water and place on a wire rack to steam and dry.
    2. Mix together the finely diced shallot, cornichons, chopped baby capers, dill, mayonnaise, and lemon zest. Set aside for later.
    3. In a large bowl, combine the plain flour, rice flour, baking powder, honey, and a pinch of salt. Gradually add the vodka and lager, whisking until just combined. Be careful not to over mix the batter.
    4. Heat oil to 180°C. Dust the potato slices with some extra flour, then dip into the batter. Carefully lower them into the hot oil and drizzle a little more batter over the top to create extra crunchy bits. Fry the potato scallops for 4-5 minutes or until golden and crispy. Remove from the oil and place onto a tray; season generously with salt.
    5. Serve the potato scallops piping hot with plenty of tartar sauce on the side.

    For overseas viewers, a large battered potato slice is called a potato scallop or potato cake, depending on the state you live in and is a fun topic of debate between Aussies from different areas. 😁 Potato cake for me, but I'll eat it no matter what it's called. 👍

      Only South Australians calls them Potato Fritters in Australia. Victoria, Tasmania and the NT they're called Potato Cakes while the rest of the States and territories (ACT, NSW, Qld and WA) call them potato scallops.
      Fun Fact until roughly 25-30 years ago the NT use to call them Potato Fritters too.

      @@user-zz1ty4ie2x Its a seasoned salt. Originally used for seasoning rotisserie chickens i believe. But its just a nice seasoning to use on anything. Most fish and chip shops here in Aus have it as an option.

      @@danielleabrahamsen369 They are in no possible way of viewing it, a cake. They are, however, most definitely made using a scallop cut. Therefore, potato scallop is the definitive term and only the most backwards of states would refer to it as a potato cake.

    Ooooh! Those look awesome delicious! (Plus I saw capers in that sauce. Double Yum!) when I hear potatoes and scallop in the same sentence I think of scalloped potatoes which in the U.S. is a casserole of layers of thin sliced potatoes and herbs baked in a cream sauce . These would be well received as a side. Looking forward to making them. Cheers 👍

      Could not be more wrong. It’s called a potato scallop, because it is literally a ‘scalloped’ potato. Scalloping is derived from the English word callop, which means to slice thinly, but not as thin as ‘au Gratin’. Calling them a potato cake is not only wrong, but extremely ignorant.
      If they were formed from mash potato with flour, then yes, they would be a cake. But they aren’t.

      Nah potato cake is mashed potato mixed with a bit of flour and butter then baked on a hot pan. Also known as a potato farl.
      This is a scallop, fritter or a special if you're from certain places.

    I’ve been a chef for years, and the age old debate over scallop or cake has been going on forever! (A bit like the pavlova, but we won’t go there😉)
    I’ve tried to explain it comes from the word escallope, meaning thinly sliced.
    But these Aussie bogans argue it should be cake.

    Ooh. Haven't had a potato scallop for decades! Had forgotten all about them as l don't think they exist here in Aotearoa. God knows why not though, cos they're delicious. Thanks for the batter lesson too Andy. Got a piece of blue cod that l reckon deserves a proper battering AND some scallops to go with it.

    For all the potato cake people.
    Do you have frosting or icing on this cake? If you had a blindfold on and ate a crunchy fried potato would you assume it's a cake?
    Fried potato chips are the same thing as this just a different shape and size. Are chips also a type of cake?
    It may be a scallop or a fritter, but it sure isn't cake.

    In the UK (well north of England) we call these potato fritters. All good chip shops sell them.

    Oohhh, oh wow! I thought she meant scalloped potatoes ( the baked dish with milk and cheese ) but this is a brand new potatoes scallop I’ve never even heard of!! Looks delicious 🤤😋
