On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. If your wood is green you can still use it but you have to burn it up in a burn barrel first. You'll burn through more wood obviously but its possible. Thats how most places in the Carolina's do it. I do it when my kiawe wood is too green.

i run the pizza at my restaurant. we have and ol old wood fired pizza oven i cannot stress enough how important having quality wood to cook with is. i live in Oregon so most of my wood is wet and not seasoned. def need to look into these people. love ya harry keep spreading that bbq love my man

Cool vid Harry! Wood is a renewable resource. Using that resource helps to support a business that is dependent on that land producing timber…that is some reassurance that that forest will not be developed or sub-divided. Counter-intuitive, but using wood products preserves tracts of forest into the future.

Howzit Soo Sifu and Sista Patty: Wishing you both a great “BBQ-Smoking,” weekend! Thank you for the lecture of the different types of wood used in creating delicious BBQ. Like Patty having great memories of her mom making kalua pork in Hawaii, I still have great memories of my dad making the same dish with the liquid smoke and cooking it in the oven. Harry is great, but someone needs to teach him how to use a moisture meter. Sticking the points into the old endgrain, as Harry does here, tells you nothing. You have to split the log and then jam the points into the newly exposed surface across the grain. You need to measure the moisture content INSIDE the stick, not on the end or on the weathered surface.

Great video Harry. I am an East Coast customer. I might add a satisfied customer. Nice. She likes tri-tip👍🏻. I’ve been a fan myself for the last few decades. I can cook it for large groups or just myself without breaking the bank. I cook it steak style, brisket style, or like a roast for dinners or sandwich meat.
Tri Tip is a staple in Cali so hopefully more folks learn more about it

Just bought a 1/4 cord of wood for 125.00. Next time I'll have them split smaller. Logs are too large and take longer to burn down and produce too much smoke
