You can make a large batch and freeze it. It freezes for up to a year. I had some from last year's harvest that I just used and it tasted good. It needs to be frozen if you aren't using it within a day or 2. You can also freeze the chestnuts. The whole chestnuts are usually good for about 2 weeks after they hit the ground.
We have a chestnut tree. Right now, there's over 75 pounds of raw chestnuts sitting in our garage. I end up giving them to the squirrels because most people aren't interested in them. They're so good in turkey stuffing
I leave quite a few for the squirrels. They leave my bird feeders alone this time of year when the chestnuts are falling. I will try some this year in my stuffing. Thanks!

What do you make with your chestnut flour?
Fritters and pancakes. There are a lot of recipes online for cakes, pastas and other things using chestnut flour.
