I was just thinking of what a big part Phyllis and Mr. Bucky played in our lives. All the great food, (that took me back to my childhood and being a young wife and mother myself), the stories, just everything that they shared with us. I knew that Mr. Bucky's health wasn't great, but I never saw Phyllis's health take a nose dive. It still doesn't seem real to me. They felt like family and because of that, it didn't seem right for her channel to just end. I'm so glad that you and Ben are continuing her legacy! Thanks so much!

I watched two of phyllis's videos where she was replacing a kitchen sink faucet and then repairing a shower leak after 3 plumber's didnt show up, she was one amazing lady.

Yes I was telling him while I was watching like he was here , I was saying Steven if they don't move when you touch them, they are not ready to turn over they let you know when they're ready to turn over......lol .....he could have used the Dutch oven that he cooked them in to brown them first and all the goodies that stick to the bottom mixes in with the gravy and makes them much better..just add a little wine or chicken broth if you don't use wine.....but the alcohol cooks off anyways but the flavor is there., .he didn't need to mess up a skillet & a Dutch Oven (love my Dutch Oven) heard it's great to bake bread in but haven't used it for that yet......there are lots of short cuts when you cook, I had to learn this too....and had less dishes to wash too......lol
I think I would have mixed the egg, milk, salt and pepper together before adding to the meat so there would be less mixing of the meat, which would save time and effort. Supposedly overworking ground meat can make it tough as overworking dough can make it tough. Not 100% sure about that, but have heard it somewhere over the years. I know you’re not your mother but that doesn’t keep me from enjoying watching you and your family. None of us are ever our parents, we just honor them the best we can. And in that your are succeeding beautifully. Mama would be proud.

I am Swedish and the way we do it is, we mix bread crumbs and milk and let it swell for a while. Add the egg, bread crumb and milk mix to the meat and then the onion, preferably sauteed, salt and white pepper. This is a traditional recepie. No mustard, garlic, black pepper, allspice or dill.😁 This dosen’t mean that you can’t add and spice the way you like it and we do that in Sweden too, but I just wanted to give you the basic traditional recepie. Often our mothers or grandmothers added a secret ingredient, may be mustard or even anjovis. Potatoes, cream sauce, lingon berry jam and pickled cucumber is what we serve with the meatballs. You could use cranberry sauce if you don’t find lingon berries. I’m sure the colonels meatballs tasted wonderful. Phyllis and I were of the same age and I have followed her on RUclips for a long time and found it interesting to get a glimpse of American life. I live in Stockholm, Sweden.

If your meatballs are a little tough or a little too firm, You might want to mix all ingredients at once. Usually the less you work the mixture the better. thanks for sharing
Yummy! Now traditional Swedish Meatballs are much smaller (ugh, alot of work!), and their spices are Nutmeg and Cardamon (or Allspice). The gravy usually uses a more savory and less salty Worcestershire Sauce (as opposed to Soy Sauce),with Sour Cream instead of Heavy Cream used, and mustard is still added) and the whole she-bang is laid over egg noodles ( or boiled new potatoes), served with Ligonberries on the side (and possibly a small glass of Akvavit). I know this is a totally different recipe and no ill intentions meant; just wanted to pass that on for other nit-pickers like me. And a tip when making Roux, stir for 10 minutes ( more hard work!) before adding liquid; it helps remove that floury taste. It's kinda sad watching all the wonderful ethnicities become lost. Hopefully we can still hold on to our traditions in this strange, new world that's approaching a little too fast, in my opinion. Well, this made me crave some meatballs...cheers! :)
Ben's been on the USS Eagle crew-- how cool is that? I live near Portsmouth NH, and the Eagle often visits in the harbor during our Tall Ships celebrations in the summertime. It's quite a sight with its huge white sails, the ship is painted white, with the red USCG insignia along the sides, and flying the red white and blue-- wow, very impressive. What wonderful experiences he must be getting at the Academy!

Hi ! I loved your mother and Mr Bucky. You and your son are doing an excellent job. I am Swedish and I just wanted to mention a few things. Swedish meatballs are smaller and don’t have soya sauce in them. ( I am taking in account that you are copying IKEA style, but generally Swedish meatballs do not). I saw in another comment someone mentioned Lutefisk is smelly. It is usually served at Christmas, and it is in Norway also I believe. The smelly fish is a canned fish called surströmming, and that smells very bad. The buried shark is not Swedish. That is from Iceland. Keep up the great videos!!!! Love them!

The next time you make Swedish meatballs add a brick of cream cheese to the beef broth, garlic, s+p. instead of all the other things whisk well to melt and blend then pour over the browned meatballs. Omg it's the best cream sauce ever and you can use the same sauce in a stroganoff too.👍I💕
Yes I don't use flour as a thickener I use cream cheese and if it needs to be thinner, then I use extra whipping cream.....so much better than the flour.....

Hello Stephen, this looks wonderful. You mentioned using pork in meatloaf, I remember that when I was younger, we used to be able to buy packages in the store that contained ground beef, pork, and veal for making meatloaf. They made wonderful meatloaf, but I haven't seen them in the stores for years. That's when I started making my meatloaf with 1 pound of ground beef and 1/2 pound of pork sausage. The sausage has spices that really compliment the meatloaf. Have a wonderful weekend, stay safe and well.
One of my early memories was going in to the store for my Mom (I was youngest of seven) and asking the butcher for beef and pork "ground together twice". I was thinking of that recently and really craving my Mom's Swedish meatballs!
Authentic Swedish meatballs have nutmeg or allspice either in the meatballs or in the cream sauce. I grew up in a Swedish - American town and have eaten Swedish meatballs over egg noodles at many church potlucks.

Looks delicious!!! I make them a lot, as they're my husbands favorite. The only thing different I do is add 1/4 tsp. nutmeg to the gravy. It gives it a distinct flavor!! I add a little to the meatball mixture, as well. I've had the recipe for a long time. It's easy and never fails. Love what your doing. Your Mom is Beaming from heaven!!!!!!!!!

Well, I’m definitely a Swede, and that looks pretty good there, colonel! I add allspice and use white pepper. Same recipe, I also add a splash Worcestershire sauce, and use tbsp. Dried parsley. Perfect. We serve lingon, or cranberries on side, like a little sweet to balance, and sweet cabbage and boiled carrots. I’m so hungry now, gotta go try making these! You have adorable kids! I don’t think Phyllis knew what an impact she made on so many people. I can see her in you, and boy your youngest looks so much like her. Thank you for continuing to put these out, awesome 🥳! Yes I diced them “fine” as you indicated in the recipe. More like minced really lol! They were perfect; so delicious! Also Browning the meatballs before baking definitely gives them a lot more flavor than the meatballs I’ve made in my past. Glad you taught us that in this video. The next time you make Swedish meatballs add a brick of cream cheese to the beef broth, garlic, s+p. instead of all the other things whisk well to melt and blend then pour over the browned meatballs. Omg it's the best cream sauce ever and you can use the same sauce in a stroganoff too.👍I💕

Yes I don't use flour as a thickener I use cream cheese and if it needs to be thinner, then I use extra whipping cream.....so much better than the flour.....

Hello Stephen, this looks wonderful. You mentioned using pork in meatloaf, I remember that when I was younger, we used to be able to buy packages in the store that contained ground beef, pork, and veal for making meatloaf. They made wonderful meatloaf, but I haven't seen them in the stores for years. That's when I started making my meatloaf with 1 pound of ground beef and 1/2 pound of pork sausage. The sausage has spices that really compliment the meatloaf. Have a wonderful weekend, stay safe and well.
One of my early memories was going in to the store for my Mom (I was youngest of seven) and asking the butcher for beef and pork "ground together twice". I was thinking of that recently and really craving my Mom's Swedish meatballs!

Authentic Swedish meatballs have nutmeg or allspice either in the meatballs or in the cream sauce. I grew up in a Swedish - American town and have eaten Swedish meatballs over egg noodles at many church potlucks.

Looks delicious!!! I make them a lot, as they're my husbands favorite. The only thing different I do is add 1/4 tsp. nutmeg to the gravy. It gives it a distinct flavor!! I add a little to the meatball mixture, as well. I've had the recipe for a long time. It's easy and never fails. Love what your doing. Your Mom is Beaming from heaven!!!!!!!!!

One thing too -whenever I make meatloaf I use my kitchen aid mixer with the paddle attachment. I know you have that mixer and if that interests you-you could use it instead of using your hands. Well, I’m definitely a Swede, and that looks pretty good there, colonel! I add allspice and use white pepper. Same recipe, I also add a splash Worcestershire sauce, and use tbsp. Dried parsley. Perfect. We serve lingon, or cranberries on side, like a little sweet to balance, and sweet cabbage and boiled carrots. I’m so hungry now, gotta go try making these! You have adorable kids! I don’t think Phyllis knew what an impact she made on so many people. I can see her in you, and boy your youngest looks so much like her. Thank you for continuing to put these out, awesome 🥳! Much more fun to cook up yummy stuff in the kitchen when we are all stuck inside for the majority of our time right? Yes I diced them “fine” as you indicated in the recipe. More like minced really lol! They were perfect; so delicious! Also Browning the meatballs before baking definitely gives them a lot more flavor than the meatballs I’ve made in my past. Glad you taught us that in this video. Definitely necessary and intensifies their flavor. Carry on Colonel!
