Cheesy spinach Dip (No roux)

INGREDIENTS:
1 tsp Olive oil
2 tbsps Butter
1 small onion, diced
4 cloves garlic, minced
12 oz Chopped spinach*
1/2 cup milk or heavy cream
3/4 cup softened cream cheese
(1 bar of Philadelphia cream cheese = 1 cup) For thick dip use lots of cream cheese for a looser dip use more milk 😉
2 tsps Worsectershire sauce
2 tbsps Sourcream
Italian Seasoning to taste
Salt and pepper to taste
Cayenne to taste
Grated Mozzarella, Monterey Jack, White Cheddar, Parmesan (use as desired)

*If you're using frozen spinach, thaw and drain it. Chop it or diced it. Squeeze out all the liquid. Add it to the creamy cheesy mixture last minute after heating that mixture on the stove.
