"The Thing" is essentially a Gongfu technique called "Nun Serves The Food" or "Nun Offers Food." In that technique your right hand shoots out palm upwards (which is where the idea of serving food comes in) aiming to the left of their jaw in order to get their left hand to move to block it. When their left arm moves you explosively step in with your left foot, your left hand covers their right hand, and your right circles down under their left arm and does an ippon ken to their left carotid artery.

Oh yes, that one is a great move. We use it a lot. This version is just so much more frustrating to get hit by.
