One of the first 7th chords I learned was a G7 without the 5 because, I was told by my teacher, the 5th is so harmonious to the tonic that you don't miss it. I guess playing it that way exclusively or predominantly works as well as using all 4 notes but would you say that it's important to know how to finger it or play it the 4 note way?
It's one of my favorite chord progressions as well! You are right that the 5th is not necessary, but personally, I love the richness that it adds to the chord. Much of what I do in these videos is personal preference, such as playing all four notes of a 7th chord or not, but I feel it's never a bad thing to learn how to play the full 7th chord. It gives you more options in your chord playing.
