From my experience fugu tastes like German turnip (so pretty unspectacular considering its danger), The hundred years egg tastes like an ordinary hardboiled one just way more intense, bird's nest leans towards a heavy chicken broth based noodle soup, blood has a very unique taste but generally it's salty and a bit steak-like in taste, crocodile has an intense fishy taste but the consistency of rubbery meat, and snails just taste like whatever butter they were made with. Oh and turtle soup tastes like freshly toasted toast smells.

I'm French and escargots (snails) are a delicacy over there, often eaten around Christmas. I even used to work at an escargot company. The animal itself doesn't taste anything spectacular, it's like a seafood without the marine taste. The texture and the seasoning are the real reason why we eat these. They might looks gross, but they are not bad at all in the mouth. If the view of cooked snails sickens you (which I could understand), ask for someone to put them in a little pastry for the aperitive. Also note that escargots as shown in the video is only the most famous way to consume snails in France. In the south, people also cook them on the frying pan with summer veggies and call it "cagouille" (ka-gooey). It's also delicious !
