SO GORGEOUS. Thank you for sharing. I love the way you give a little bit of the history of the plants in your videos. Sadly, the evergreen azaleas that are supposed to be hardy here are winter killed in my zone 5B with temps down to MINUS 25 some winters. I grew them easily in other states where I've lived, but they are always winter killed here in this cold mountain area. They are some of the most stunning Spring bloomers. Maryland, D.C., and New Jersey gardens are ablaze with beautiful evergreen azaleas each Spring. I am definitely going to look for that variety of Salvia this weekend at the nursery. Salvias are some of the most beautiful but underused perennials and the pollinators love them. *Is this variety, Salvia May Night, also popular with pollinators?*

We don't know for certain, but it has been reported that this selection is hardier and will take colder temperatures than many of the other evergreen azaleas. But of course that depends on other factors like shelter from wind exposure, site drainage etc., so your site might be just too cold for it.
In which case, you could possibly consider substituting it with another low growing white flowering item like say Deutzia Nikko: ruclips.net/video/2iwHPze6qXs/видео.html
It will be deciduous and a bit taller, but it (and other similar shrubs) would flower at about the same time to provide a similar effect.
Finally, we can confirm from our observations that May Night is popular with pollinating insects too.

I have the type of Silvia in my garden but they tend to flap over, not as straight as yours. Any tips?
Some selections are taller and "floppier", especially if they are grown in rich, moist soil. So, ease off on fertilization and if you have an automatic watering system - consider reducing the frequency of that too.

As David mentions in this video, if you trim them back regularly, you can keep them sturdy and bushier and producing crops of new flowers through the year (often 3, and sometimes 4 cycles). Will those do well in South Louisiana?
Not sure about that! Our experience with it, only extends to its performance here in our Mid Atlantic and Northeastern region where we know it excels. So we would defer to what your local garden center and nursery people can relate.
A quick check suggests that it has a upper heat zone level of USDA Zone 8, so it may be OK if that is your zone, and you plant it in shady spot. But again, checking with your local experts would be a wise course of action. Sorry we can't be of more help.
