  • On this episode of MYG I am in San Francisco where I meet Jacques Bezuidenhout and he prepares his Spanish Negroni. Thank you Julio Bermejo and the team at Tommy’s Mexican Restaurant in San Francisco for letting us use your bar!
    **************************************
    Spanish Negroni
    1 oz. (30ml) Campari
    1 oz. (30ml) Tanqueray Ten Gin
    1 oz. (30ml) Amontillado Sherry
    .75 oz. (22.5ml) Sweet Vermouth
    Orange peel zest
    Instructions: Combine the ingredients in a beaker or mixing glass and stir for 15 seconds. Strain
    into a Cocktail glass.
    Garnish with an orange peel

    Is it really carbonara if you use bacon instead of guanciale and you add peas? Everything is a riff on something haha.

      Kenneth hwong Good point! It’s such a philosophical topic. Maybe... If you are only replacing 1 ingredient perhaps it can be considered a riff. If you replace more than one now it’s a while different thing?
