My mom serves her saurbraten with meatballs and egg noodles and sauerkraut. She got her recipe from a lady she rented an apartment from when she lived in Keiserslatern, Germany in the '60s.
God I haven't had Saurbraten since I was in middle school. It was a favorite of my grampas and my Gram would make it for his birthday. Along with homemade red cabbage and dumplings... My mouth is watering!

I just can't believe it, you went through all the trouble to make good sauerbraten with all the right fixings but then you go and cheap out on the Kartoffelklöße (potato dumplings). Making authentic Kartoffelklöße (potato dumplings) is not that hard and they taste way better than those store-bought dehydrated dumplings in a box. Not to mention you forgot to serve a good ole Dunkles Hefeweizen (a dark wheat beer) with the meal.
I will be using Red Wine vinegar, red wine, lemon and a few ounces of Cherry Herring ((cream sherry). Probably a bit of Worscheshire. I'll serve it over home made braod egg noodles sorry to confess that this is a hybrid from my Irish paternal G'mom and my wife's Dutch Mother. What could go wrong?
Hi Lyndsi - Seasons Greetings to you and yours - We used a run of the mill Roast Beef - Any cut will do for Sauerbraten!!! Let us know if you have any other questions!!
Should be titled "Authentic American Style Sour Beef". Too many American and British techniques and ingredient additions to be "authentically" German. That said, I'm sure it is really good. Especially if you're more accustom to British and American style braises.
As a test, I grated a Lil' Dutch Maid Almond Windmill cookie into a bit of the gravy and that brand of ginger cookie it made it creamy and just sweet enough. I never added any other sweetener into this sauerbraten gravy.
I really don't think you have to marinate the meat for a week , just cook the Roast in Vinegar and water will give same results > The only reason they did that was to preserve the meat .
My husband talks about his grandmother’s recipe, she marinaded her meat for 6 days also. I will definitely have to try your recipe. I did miss the information on the potato dumplings, who makes them, etc.
I always add gingersnaps to my sauerbraten gravy, so good. Never met my german grandmother but that was her recipe. I serve mine with spaetzle, will have to try those dumplings!

So you add enough ginger snaps to 'thicken' the gravy, since no flour is used?
Yes just crumble and add until you get the thickness you want 🍺

Looks so dry, and boxed dumplings... Idk. The gravy looks good, wish we had more info on how to make it.
