What Fats did was actually applying standard New Orleans grooves just like other New Orleans piano contemporaries like Professor Longhair, Huey Piano Smith and Champion Jack Dupree etc, but his style of play was somewhat simplified the right way and more "pumped" up than the others. In fact, many other Rock'n'roll artists like Bill Haley, Jerry Lee Lewis and Elvis did exactly the same by adopting either blues or RnB songs and made them into new fresh Rock'n'roll material. As another example, Shake, rattle and roll was originally recorded by Big Joe Turner, but was played almost the same way by Bill Haley later on. Although, they sound a bit different, it was basically a cover with greater commercial success than the original RnB classic. It's even hard to separate these two versions into different music categories. As Little Richard once said, "The blues had a baby, and they named it Rock'n'roll".
Elvis acknowledged that Fats was a pioneer of it even before he was. I remember he mentioned it at some sort of convention that fats was also attending.
