Venison is big in our area, so pickled deer heart was made by my gran every year for ages and ages, usually for the Xmas eve get-together. Thing about pickled food is that you don't usually eat it alone. All the picklers/fermenters from Europe almost always mixed in a fruit of some kind to take off the bite of the sour. Unless, like me, you're totally into it. Polish dill pickles are the best I've ever had. I can devour a kilo of them and not even get up.
