Unfortunately we will need one or the other for the potato chips. For the fruit chips I recommend the silicone mats because you wont get the same result with parchment paper.
Potatoes only go in the oven once. If they were not crispy you can leave them a little longer but check often. Depending on the thickness of the slices they may require a little more time.
Totally agree but as this point, cooking is a lot of taking and borrowing and innovating those old ideas/new ideas, that is the beauty of cooking at these levels, plus the way he does things in his videos you can tell he’s very creative, and usually the creative ones are very passive with sharing ideas and innovations and enjoy sharing with others like myself!
These have existed for a long time before this, look up "Laminated Potatoes" Chef Bruxel is here to be an excellent teacher, I haven't seen anyone show demonstrative videos that are as high quality/skill as his.

They are really fantastic, thank you for sharing this recipe. I have a question though once we made them how can we store them fresh and crispy?
As with other potato chips the best way to store them is in an airtight container or bag but always best when fresh.

what is the silicone mat substitute?
