  • Everyone has unique tastes and preferences when it comes to food, and baked goods are no exception. I am not particularly drawn to muffins. I prefer cakes, simple cakes with add-ins and without the frosting or glaze.
    Muffins are usually individual portions, which can be convenient but might not provide the same experience as slicing into a beautifully baked cake. Sometimes I do bake muffins, like today.
    The last time I tried my hand at banana loaf or muffins was way back in culinary school. Had a couple of over ripe bananas which no one wants to eat. Making a milkshake or smoothie was not an option. Whipped up the recipe for these muffins from school days. And I was not disappointed!
    These Banana Chocolate Chip Muffins are melt-in-your-mouth delicious. Chocolate, walnuts, bananas, and butter make these sweet treats so yummy. Tweaked the recipe a little by infusing the batter with warm cinnamon and nutmeg spices.
    These muffins are perfect for breakfast or as a snack. They're moist, fluffy, and packed with banana flavour and chocolate chips. The recipe is quick and easy to make, using simple pantry staples.
    These muffins freeze well, so you can make a batch and save some for later. Just wrap them individually and store in a freezer-safe container.

    Ingredients
    • 2 BANANAS, RIPE
    • 1/2 CUP SUGAR
    • 1/4 CUP BROWN SUGAR
    • 1/3 CUP UNSALTED BUTTER
    • 1 EGG
    • 1 TSP. VANILLA
    • 1 1/2 CUP ALL-PURPOSE FLOUR
    • ¼ TSP. NUTMEG POWDER
    • ½ TSP. CINNAMON POWDER
    • 1 TSP. BAKING SODA
    • 1 CUP CHOCOLATE CHIPS
    • 1 CUP WALNUTS, CRUSHED
    Method:
    1. Preheat oven 350F and line muffin pan with liners. Set aside.
    2. In a bowl mash the bananas.
    3. In a large mixing bowl, add sugar, brown sugar, and butter.
    4. Use an electric hand mixer to combine everything for about 1 minute.
    5. Add vanilla along with egg and mix them in on medium speed.
    6. Add the mashed bananas to the muffin batter.
    7. Add flour, baking soda, nutmeg and cinnamon. Mix into the banana muffin batter.
    8. Add walnuts and chocolate chips. Fold them in.
    9. Fill each muffin tin with batter till full.
    10. Top the muffins with extra chocolate chips and bake for 20-24 minutes.
    11. Cool and serve with tea.

    That's how I crush walnuts... with my hands. Truly handmade foods are best for heart and soul.
