The Ultimate Seasoning Sauce for any noodles | Chinese Noodles w/ Scallion Sauce 葱油拌面 Scallion Oil

  • Let us show you a way to prepare this basic seasoning sauce to go with any noodles that you like. You can use any noodles that you like ranging from instant ramen noodles, egg noodles, fresh noodles or even spaghetti. The fragrance of shallot oil and the aromatic special oyster sauce mix is just perfect. You can easily store the excess shallot oil and special oyster sauce mix in the fridge for weeks and add them to your noodles whenever you feel like a quick meal fix. Serve your noodles with some wanton, char siu, fishballs, chicken nuggets, sunny side up or anything that you liked. We had these noodles yesterday to go with our spicy Chinese chicken. (see video here: • Super Easy Szechuan Sp... ) In fact we have been having these scallion noodles for a few days now. We can never get sick of it. Super yummy!     Serves 18

    Note: Even if you're not cooking for 18, you can make this amount and keep the excess in the fridge so you can take the sauce and shallot oil out as and when you feel like having noodles with scallion sauce (shallot oil noodles)

    Shallot oil
    ======
    1 cup (250ml) cooking oil (amzn.to/3chXwHj)
    50g of thinly sliced shallots
    150g red onion
    1 stalk Chinese leak
    3 stalks spring onion
    Special oyster sauce mix
    ======
    1 cup (250ml) water
    1/3 cup (80ml) light soy sauce (amzn.to/2AcAlA1)
    2 tablespoon oyster sauce (amzn.to/2YIyUnb) (vegetarian: amzn.to/35JTzbO)
    1 tablespoon dark soy sauce (amzn.to/3ctiFOA)
    2 tablespoons sugar
    Some cornstarch solution (amzn.to/3ctiFOA) Mix 1 or 2 tbsp cornstarch w/ a bit of water
    Other ingredients

    Any noodles that you like
    Some chopped spring onion (optional)

    I make a similar sauce when I'm stir frying noodles. One suggestion i have is to add a teaspoon of seasame oil or more. It really adds a nice flavour to the sauce! Another ingredient to try adding is Worcestershire sauce. It'll taste very similar to yakisoba sauce. These are all really simple but very tasty sauces that anyone can make!

    So many aromatics! I love it! My mom usually makes flavored oil with just the scallions, but like the idea of starting out with shallot oil and ending with shallot crisps.

    I've never has crispy fried onions / shallots in Chinese cooking . They are usually used in Indian cuisine and I love them!

    This looks so delicious, I didn't know that's how you made the oil and that you even used it. The sauce looked so rich and yummy, the fried shallots I never thought of, using only one pan for making everything is great too!!!! Everything can be vegan except the oyster sauce and I'm vegan so that is fantastic!!!! Thank you very much!!!! I'm going to look through your videos to see if there are other recipes that I can learn from before deciding to subscribe but I did "like" your video and obviously "comment"!!!!

      My mom used to do that too. Fry up bacon in a pan and then drizzle some of the bacon fat and some oyster sauce over the noodles. Top with the fried bacon. So delicious and a favourite comfort dish from my childhood!

    Delicious meal. Due to the Coronavirus, Manchurian and many instant ramen noodles are in low supply in America and Singapore. Soy sauces and spices are hard to locate as many are feeding families as cheaply as they possibly can (USA 36 million out-of-work). I'm especially pleased that I convinced my Singapore friends to use pasta, beef and chicken broths, and non-traditional spices too. Most will use Garlic Powder instead of salt for the rest of their lives.
