INGREDIENTS:
* Gram Flour (बेसन) - 1/2 cup
* Curd (दही) - 3/4 cup
* Water (पानी) - 1/4 cup
* Salt (नमक) - 1/2 tsp
* Turmeric powder (हल्दी पाउडर) - some
* Sugar (चीनी) - 1/2 tsp
FOR TADKA:
* Oil (तेल)
* Urad dal (उरद दाल)
* White sesame seeds (सफ़ेद तिल)
* Split mustard seeds (राई दाल)
* Dried whole red chili (सूखी लाल मिर्च)
* Asafoetida (हींग)
* Curry leaves (कड़ी पत्ता)
* Desiccated coconut (नारियल बुरादा)
* Coriander leaves (धनिया पत्ती)
* Namkeen/Sev (नमकीन/सेव)
RECIPE:
Take a bowl, put sieved Gram Flour, Curd, Salt, Turmeric Powder and Powdered Sugar in it then add Water in it gradually and whisk it in the same direction and make it lumps free.
Then clean the kitchen platform/slab and grease it with Oil properly. You can make Khandvi on steel plate also by greasing it with Oil.
Then keep a pan on flame, keep the flame slow and put the Khandvi batter in it. Stir it continuously and cook it on low to medium flame till it turns thick. Then turn off the flame and put the mixture on the greased platform. Then make cuts with a knife and roll it carefully.
For Tadka, keep a pan on the flame and put some Oil, Urad Dal, White Sesame Seeds, Mustard Lentil (Split Mustard Seeds), Dried Whole Red Chilies, Asafoetida and Curry Leaves in it. Cook them on slow flame and then turn off the flame.
Garnish the Khandvi with Desiccated Coconut, put Tadka, Coriander Leaves and some Sev on the Khandvi.
In this way, very soft and easy to make Khandvi Recipe will get ready at home.
