I would choose the 358 for 2 reasons....one I am a big medium bore fan with a special liking for 35 caliber. 2nd the way you have the trajectory out to 300+...and you seem to just like that gun the most out of the 3 you were shooting!!!

Based on what you said about all 3, I think the .358 should get the nod. You seem to be the most comfortable with it, and you know where it hits at extended range.

Used myself the 9.3x62 on a lot of big game and its one of my favorite medium bores. It depends on the distances of course, but at any reasonable hunting the 9.3 will do a great job. Itnhas outstanding killing power, deep penetrating, and moderate recoil. In the rut bison can be testy and very territorial. If hunting in heavy cover under rutting conditions maybe the .458. The .358 Norma if hunting could be at longer distances. The only Bison I have taken was with a .404 during the rut, distances around 100 yards, or closer. Any would be fine, but I pretty much would opt for the 9.3 from having used this on a variety of big game. Asian or African buffalo the 9.3x62 has taken many but I would pick your .458, of your three rifles. My favorite bullet in the 9.3mm is the RWS TUG 293 GRAIN, difficult to find.

The Germans knew how to make great bullets like the TUG. I believe they were the first to come out with the H partition type bullet. The 9.3 by 62 is a great cartridge, can be built in a light rifle. In some African countries it is legal to use on Dangerous Game.

9.3x62 because it's a gorgeous gun. I wouldn't hesitate to shoot 300 yards on a bison with the 9.3 if you are 3" high at 100, I would expect just over a foot low at 300. It will out penetrate the .358 too but I think you've already decided to use the Norma Mag.

Looks like you’re Ready for bison hunting, Looking forward to seeing what you shoot, I really enjoy seeing how thorough you are making sure you know where your bullets going to go, makes me feel like I don’t do enough training, till I remember a 50 yard shot is about Max for most of my hunting, I finally found a place I can probably shoot up to 500 yards, but I’ll probably have to wait till after deer season, so maybe I can do some long-range shooting too, hard to keep open space around here, if you don’t keep your fields bushhog two or three times a year they will grow up in trees. The longest range ever shot a deer is 240 yards that was on the powerlines, and I felt like I was shoot to the other side of the world, most shots a day or 50 yards or less, it’s hard to see deer beyond 50 yards most of the time,

IMO I'd go with the .458 Win Mag if shots are expected to be under 200m. Add to that a loading versatility that spans a range of bullets from 150 to 300 grains you have the greatest sleeper to come down the well-traveled cartridge Pike. The 358 NORMA MAGNUM.

Hiking up to sheep or Goat country going through alder's or heavy brush in Grizzly country I'd have my 358 Norma loaded with Woodleigh 310 slugs once I got up to the sheep or goats I would switch to the sighted in 225 grain Sierra Spitzer boat tail. Sheep are fragile, goats are tough. That bullet would have a lot of authority way out there. It would be unique to hunt with a caliber other than the usual 7 mm or 300 Magnum.
