    This Biko (Filipino Rice Cake) is one of my favorite delicacies back in the Philippines. It's a sticky rice cake with a delightful aroma and taste. The Latik topping (coconut curds) enhances the flavor of this rice cake with a more coconutty taste to it. I enjoy this for dessert or any time of the day with coffee and tea.     To Cook the Rice:
    3 cups Sweet Rice /Glutinous Rice
    1 1/2 cup coconut milk
    1 1/2 cup water
    Pandan leaves
    Coconut Milk Mixture/ Syrup:
    2 1/2 cups Coconut Milk
    1 1/4 cup Brown Sugar
    1/2 tsp of Salt
    Latik / Coconut curds:
    1 can or 2 cups Coconut Cream

    Sarap ng Biko!!! I love that you baked it and the perfect slice! and the latik!! That's what my lola makes with fresh gata!

      I know wish I have fresh gata LOL.. but latik is still so good with the coconut cream.. 😍

      @@GieCucina Granted sticky rice is a common snack in Asian cuisine. Not sure if I've had biko specifically!

      Haha! For the canned coconut, I prefer using the coconut cream kasi it’s thicker and it makes more latik and lesser time than coconut milk :) Salamat! ❤️

      Oh my can’t remember where I got this pan lol, non-stick pans are better :) Also, got the pandan and banana leaves from Seafood City Filipino Store ❤️
