I use the 3 - 2 - 1 method in mid America. 3 hours on the grates . 2 hours wrapped with a splash of pineapple juice. 1 hour back to bare to dry the bark a bit.

Fancy bit of kit there that produced what looks like pure divinity but this sort of cooking, I’ll leave to experts like yaself and Frankie’s Smokehouse @ Woolloongabba and happy to part with me hard earned to enjoy… cheers Gibbo
@@foodwiththefox5350 Great video! I've just started my bbq life with 850G. But from the instruction, it says "due to high heat, do not cover the flame broiler or probes with aluminum foil. Does it matter that you actually covered it with foil?
When you "Spritz" or spray the apple juice be sure to use a sprayer that is Bar5F Empty Plastic Spray Bottle .... BPA-Free Food Grade. Some spray bottles don't have this certification. Those are made for chemicals such as bug spray and things like that.
Hey mate they look good, just a question about the pit boss, what temp does the 'Smoke' mode (on the temp dial) sit on and do you use it? or does putting it onto 120c give them enough smoke? I normally use a kettle but thinking about buying a pit boss.
Hey there On smoke mode it sits at around 90-95c which is good to start things or finish off on. At the 120c setting there’s still plenty enough smoke I’m really happy with the purchase 👍
Not sure who they are? Never really heard of them are they on RUclips?? My main go to on RUclips is a channel called “How to BBQ right” that guy is very helpful and gets good results 👍👍

Question..... If you cover the bottom of the grill with foil, doesn't that limit the amount of smoke/flavour penetration into the meat?
No it still functions fine👍. There’s a metal baffle under the grill and I simply cover that in foil for easy clean up👍

What fluctuation I. Temperature do you see?
@@ryanlarochelle7089 once it’s up to the set temp there’s no real fluctuation unless it’s effected by high wind but even then not much of a difference
