I just baked this and would like to share my experience. This is one of the easiest recipe to follow. The ingredients is sufficient to fill up 6 medium size cupcakes. After baking it fills up to 2/3 to 3/4 of the casing. I use a Mayer fan oven and adjusted the temperature to 175 deg C for 22 minutes. The texture melts in your mouth. Yes, it's that soft and light too. I didn't use powder sugar to decorate the top as the sweetness is just right for me. I understand why it's important to use the butter straight out of the fridge if not the butter melts slightly before introducing the first dry ingredient. The sugar level is just right for someone who don't like cakes that are too sweet. And increase the sweetness by adding powder sugar as decoration. Alternatively use diluted apricot jam to brush over top for shine. From this experience, the next round I will double the ingredients and bake 10 cup cakes. I will increase the timing by 3 more minutes or so. That way I can share with my neighbour. A BIG THANK YOU to Apron for a delightfully easy and delicious recipe. @@5A55YDEE if you use soft butter at the start (and not butter straight out of the fridge) when adding the dry ingredients the consistency will be runny and you won't be able to get the mixture into the bag You probably would need to spoon the mixture into moulds. Don't know what the end result will be like if the final mixture is runny.
Just tried this. Used a hand mixer from beginning to end. (Don't really understand why she goes back and forth between mixing methods.) Double the recipe and used an 8×8 inch pan. For those of you worried about the batter looking curdled after mixing in the egg, don't be. Just be sure to beat it REALLY well. It's not uncommon and won't affect the outcome. Didn't have any cake flour, so used AP flour with the standard substitution method...1 c Cake flour= 1 c AP flour minus 2Tbs, replace those 2Tbs with 2Tbs Cornstarch. The only thing I might do different is either saute the apples slightly or microwave them a little. Despite slicing them thinly, they were a little too firm for me...but not unpleasant. Great recipe if you're watching your carbs. Going to try next time with a no calorie, no carb sugar substitute. Great recipe!!
I just made these and they are a hit with my husband! He doesn’t like very sweet pastries, and says these are just right! I did put a mango glaze after baking. The apples could have baked a bit more, but I didn’t want to over bake the cake. I’ll slice the apples thinner next time. Otherwise a great success! Thank you for a delicious recipe!
