It's great finding Aussies on yt art, esp since you are trained in art and teaching-so many youtubers are not (I'm an artist in the Blue Mtns) I joined an urban sketch group up here and haven't yet got to it. 34 degree days where they met the past 2 times! Thanks mate😊. Canson mixed media pads are good for sketching and have lots of pages. Ok for light washes but not heavy watercolor.

Strathmore makes a number of 'Visual Journals ' that are made from cotton. They work well with watercolors and are affordable... around $20.
