Never thought about coconut profiteroles - but they sound great - and yes desiccated coconut would be perfect to go into the cream. although it could make the piping into the profiteroles more tricky as it could clog up the nozzle. Bets to make bigger ones.
I made these earlier, but I'm highly lactose intolerant, so I used dark chocolate instead of white, and I made the cream filling out of coconut cream instead of double cream and a bit of banana instead of raspberry. They were so good, and everyone loved them! Thanks!

I was just kinda like, "wow, you just taught thousands of people how to make something that completely boggles people's minds soo easily." I expect you guys to teach people how to make eclairs now so that people know how easy they are to make!!

I made these yesterday but my brother doesn't like raspberries, so instead i just used spearmint flavoring with the white chocolate and it was amazingly good!~
This is a great recipe! I used my own strawberry cream cheese filling and dipped them in milk chocolate instead of white. They were still delicious and everyone else loved them as well. :-)
They're best cooked fresh, so slightly crunchy on the outside and soft in the middle. The supermarket ones are usually a slightly different texture, probably so that they keep a bit longer.
the piping bag bit is so much trickier than it looks to get the shape just right.. takes a lot of practise, and messy fingers!! its heaps of fun tho :')

The reason they turn out hollow because of the gluten that is produced during the mixing process captures the rising hot air and steam. The water evaporates and presto, choux pastry. Love your stuff guys :)

Looks delicious! I've tried to make eclairs before but, just like the story in this video, they didn't rise hardly at all. I know choux pastry can be tricky, but what should I look out for to do/ not do to try and avoid that happening again?
we make at our restaurant profiteroles filled with whipped cream (with vanilla extract) but you can use also this in your video or whatever you like. And on top we put butterscotch sauce - melted butter, granulated sugar, shot (or 2 :D) of some scotch and make it warm/hot. Hmm, nice...also you can add to sauce some cream as well if you like. Hmm, tasty as hell...well I like it soo...maybe give it a try...
