Historically vindaloo is the most interesting dish, initially it was Portuguese way of cooking vinha de alho, it was brought to India, Goa, in the 16th century, then it developed it self and its brought back to Europe by the British empire. Today vindaloo is only famous in the UK, although everybody thinks is a Indian dish in fact is from Portuguese origin.
We've always used fenugreek (very important for the Vindaloo flavour) and black mustard seeds. Pork vindaloo curry always had that lovely flavour and was dotted with those black mustard seeds.
Of course, I added salt in the marinade process and to taste while cooking. I used cider vinegar and mustard oil for cooking! I e had the best results with this simple vindaloo recipe compared to others. I went a little big on the 🌶️! Fantastic!

You traditionally use goa vinegar or fruit vinegar (cider vinegar) in chicken vindaloo. However you can substitute it with red wine vinegar or malt vinegar.

As this channel is for a knife brand, I don't think he's involved with the comments or will answer. The chilis you bought are the correct kind. Next time soak the dry chilis in hot water for an hour and they will reconstitute. Palm vinegar is widely used in India and has a mild yeasty musty flavor. Rice vinegar in fine as it's also mild and white wine vinegar would work as another substitute.

Probably about 20min or til the chicken is cooked. What I'm sceptical about are the spice measurements. It says in the description a tablespoon of black pepper, coriander etc. No way is that a tablespoon the chef puts in?

Dear Ranveer- Vindaloo is made in my community since 100s of years. In weddings our mothers and grandmothers we make it in huge quantities for the guests. A wedding in my town Vasai is incomplete without Vindaloo and we call it Indyal. Unfortunately none of the recipes on RUclips have got it right. Water, onion and potatoes are never added to the real traditional vindaloo. Vindaloo is supposed to be a preservative dish and adding water, onion or potato will spoil it in a day. Sorry Ranveer but no marks for this recipe, it isn’t authentic.
Actually ... your recipe isn't for Vindaloo. Vindaloo must have fenugreek and black mustard seeds. I think cardamom pods are used too. Also no yoghurt or coriander leaves. Plus with true vindaloo you just marinate the meat in the spices first
yes, very important to use the right type of vinegar and don't use too much. You will have to try various vinegars until you find one that works well. I've tried brown vinegar, white vinegar, rice wine vinegar and apple cider vinegar. The taste can vary according to brand too. I think I prefer the Pearl River brand of rice vinegar. Experiment until you find one that works for you. The vinegar should caramelise, for want of a better word, but its all about the sugars in the vinegar converting correctly, and THEN the flavour magic happens. :) The vinegar and fenugreek are what gives vindaloo its special flavour. Black mustard seeds give it that true Goan flavour. Portugese/Indian cuisine is all about the spice magic. When you get the mix right you can truly create some magic. :)

Will depend on the type of meat I think. Possibly add towards the end in case the salt toughens the meat while marinating. Or maybe it doesnt matter.
