    The first time I made this, I failed to check that a knife comes out clean. Sadly, I had to throw it out! My second attempt was successful. In lieu of ghee, I used 1 cup of extra virgin olive oil. I left out the Maghreb and used anise seed exclusively since that's what I had. We're an American family who has little exposure to middle eastern desserts. My mother absolutely loves this cake. Now we too have a reason to wait for blood oranges 🍊 Thank you, Suzanne! ❤

      Thank you Cynthia! Yes you can absolutely use regular oranges. I just love using blood oranges because of their beautiful unique color patterns.

      @@SuzanneHusseini Thank you Suzanne for your prompt reply. So funny as my husband just came home with some Cara Cara oranges. They are sweet and juicy and look like blood oranges. Now on the hunt 👀at my local Arab grocery store for the mahlab. Can't wait to make this cake and I'll let you know how it turns out.

    Hi Suzanne. I made the cake just now and I didn't have enough cake flour at disposal so I opted for AP. The batter came out on the thicker side - more like banana bread. Was this because I didn't use cake flour?

      Hi Maryam.
      You can use all purpose or cake flour interchangeably .
      The batter shouldn’t be too liquid.
      How was it after baking?

      It is just equal parts sugar and water with 1 tbs lemon juice and boiled together until sugar dissolves. I will sometimes add a little bit of rosewater and/or orange blossom water which is optional!

    3/4 c clarified butter seems a bit too much since my mixture was gooey instead of the pastry texture in the video.

      It is the right amount.
      When you add the liquids and beat it becomes creamy and fluffy.
