I want one. I researched forged carbon steel pans from several companies and I decided if I was to get one this is the one I would go with. I like the look of the handle, and the overall look of the pan. Can't wait to see you put it to the test and see how it does.
Looks gorgeous! Now I want one... How flat/even is the underside of the bottom? I have an electric glass top stove, wondering how it would work with that.

Not necessarily, it depends on the brand but I like many of the French made carbon steel. If you prefer American made Smithey, Cast-A-Way, SBForge, SolidTecknics, Blanc Creative and many more are great. The biggest decision on which pan to get depends on the handle of the skillet. Some are not oven safe and some are. Another point to consider is the thickness of the steel, 2mm is super light weight and responsive. 3-4 mm is heavier and better at searing and maintaining heat. Those are the biggest differences. If you got any other questions please ask, hope this helps. Thanks
@@bambikiller338 Actually it does not really matter. It's personal preference. I have pans with and without rivets. Some people don't like rivets. I don't have a big issue with them.
Beautiful,but don’t be 100% certain it’s actually hand hammered.. To me it looks more like some process to make it look hand hammered. The bottom is for sure pressed in a machine and the sides have too big hammer marks for a real hand hammered skillet.. But I can be wrong of course. I hope so;). Sorry for the boring vibe here..just a critical eye watching.. Love your channel!

I was wondering what fish spatula do you use? I like the length of it when you are cooking.
The overall length is about 11” and the metal portion is about 6.25”. I have several, one from William and Sonoma, 2 from Smithey and one from Winco.

It’s flat with minor movement. It doesn’t have a bow in the center but I think it’s thick enough to prevent warping

Definitely! Other Carbon steel cookware is going to be a bit more money with the exception of French made.
Also i just looked at the hand hammered smithey carbon steel pan. Beautiful almost too nice to use $295 was too much for me.

Matfer Bourgeat is another French company. Their skillets do not use rivets. Their handles are welded on. Excellent pans.
