Scandinavian Baking - Krumkake with Lillian Vaughan Lemhouse

  • Lillian VaughanLemhouse shows us how to make a traditional Scandinavian treat, krumkake, which is often served with whipped cream. These are traditionally served after dinner during the holiday, especially Christmas.
    Recipe:
    2 eggs
    1/2 cup sugar
    1/2 cup butter, melted
    1 cup sifted flour
    2 tbsp cornstarch
    1/4 tsp cardamom
    1/8 tsp cinnamon
    Directions:
    Whisk eggs in a medium bowl
    Add sugar
    Whisk together until bright yellow
    Add melted butter, mix
    Add flour a little at a time to prevent clumps, whisk until combined
    Whisk in cornstarch and spices until combined.
    Batter should be slightly thicker than pancake batter - add milk if it is too stiff, or more flour if it's too thin.
    Cook on medium heat with a krumkake or pizzelle press.
