    2015年開業,7年已開到全香港42家分店,齊柏林熱狗成為香港最大型的熱狗快餐品牌。高峰期一天可賣8,000隻熱狗,生意好的時候一年賣180萬隻,前年自設麵包工場製作新鮮麵包,開齊記美食賣兩餸飯,更踩過界舉辦音樂會。
    齊柏林以價廉物美和性價比高為定位,專擇租金便宜的小舖經營外賣生意,一開始已實行加盟制度。然而這大熱熱狗品牌近年負評如潮,不時有人批評熱狗包太軟淋,汁醬太多,芝士僵硬,這次我們邀請老闆Benson和Tam親身試食和回應,拆解紅極一時的快餐退步原因。

    其實大部份食物都係要趁熱食,啲食物焗住至少15分鐘,再加埋放喺車手度吹風,根本好難作準,所以我自己一向都唔太喜歡外賣,除非我好快返到屋企

    仲搵food panda送,耐上加耐,呢啲問題好合理😂 仲要特登落去鋪頭order嚟測試幾耐凍,18分鐘米線都凍同發漲喇,今集真係好癲🤯

    芝士哩個真係非戰之罪
    用得真芝士就一定擺一陣就硬
    用芝士醬又會有人話偷工減料
    哩個問題除非同時做曬兩邊
    叫個客落單時揀埋用真芝士定芝士醬
    如果唔係基本解決唔到...
    同埋......個盒設計真係好伏
    唔好話四個字...入盒兩個字內就會變濕水薯條...

      啱呀 芝士醬=偷工減料呢個諗法都幾錯,正常要加既材料分分鐘cost仲高...落真芝士都可以整到芝士醬...唔係假芝士先做到..咁點會平過就咁叮芝士再火槍燒

    其實買呢類外賣返到屋企一定係凍左淋左,所以都習慣左食之前氣炸返佢先食,熱狗包即刻熱返,芝士拉絲,著條脆返。
    你買個有醬嘅薯條返到屋企凍左,就梗係又淋又一餅野,我真係唔知有邊間炸野返到屋但仲係又熱又脆。

    其實有啲唔公道喎😂兩餸飯你都買完企喺條街度即食 嗰啲熱狗就買咁多外賣 等得黎都凍哂啦 起碼大半個鐘 乜嘢芝士乜嘢薯條都淋晒啦

    老闆想法是無錯的﹐其實因為熱狗同薯條等product喺德國已算是主食,而且平時lunch佢哋都係鍾意食包,邊行邊食先係德國常態。當然兩地市場需求不同、文化不同,但如果第日唔使戴口罩咁麻煩,其實即食都幾過癮啊~

      This is such a dangerous point. Do not promote something which is not culturally related to that country !!! Hot dog is an American food wor. Sausages is European. Do not cross over. In Europe, yes, bread, milk, cheese, and potatoes, is common. This is traditional. And it also relates to either Catholicism, and /or Christianity. Getting this wrong, is almost as bad as Europeans selling "incense" as "perfume stick". This is BAD marketing ! Cos basically you are rewriting somebody's history... their legacy..... Just because Germany has the ECB, or that there is the euro. Does NOT mean... that their soveignty, or their food, be bastardised. People do not like it, if they claim that dim sum is not Cantonese. Would you be happy, if Mongolian claimed dim sum is theirs ? Mongolian dim sum platter...

      Many "mix and match" recipes can only exist in the USA... Those items, are mostly patented. And they cannot enter the European markets. In Europe.. we don't do "chains"... Cos most food are of their own original traditional recipes.. and have small stores or shops. Just like HK for the independent foods. Don't mess this one up please !!!! In Europe.. there is an entire legal system now in place to protect the recipes formula and more.... Unless these "businessmen" wants to fight those global patents.. and enter into a UN war...

      @@jason070800 : Why don't you google the word "Patents"... and see what results you get back? And then you will know whether you have violated it or not. People in HK keep saying that, there is "no freedom of speech".. in truth... When a country "owns" you, they put a shield over your entire city. So that you do not see outside of that. But now HK is the same level as the mainland. i.e. You now HAVE access to the entire globe. So now, yes.. you guys are no longer protected.. and you need to protect yourselves. So if some company elsewhere can see you advertise.. then they can demand negotiation, and money too.
      Some Singaporean, or some Malaysian would often be arrogant online. But I am sure that most Singaporeans know the laws... and how it all works. And how they are paying and seeing this as well. So... When Obama did not divide the internet... and then when... PRC locks down the internet... (actually, they have not even gotten this correct, or right either, cos I am sure that PRC has their own laws).... Otherwise, foreign companies would not have been having such a hard time over the past 20 odd years.... Everybody call themselves "a TV channel".. Actually, they have no license to operate themselves as one ?.... The biggest wrong move that Google did, was to take over RUclips.. and pretend that every user on YT. Can act as a TV broadcaster. They cannot. Cos every single country have their own laws when it comes to broadcasting. After that... Google then restructured themselves and became "Alphabet".. to come.. and streamline and then fire the different illegal aspect... This is what usually happens when it comes to a company, wanting to grow, but grew the wrong way.

      "Hak gwai" is maybe not illegal in HK.. cos "Gwai lo" is now deemed as not illegal... But in the eyes of the English language world. It IS derogatory. Cos that is not the culture. That is NOT the language. And it is NOT the laws. The policeman or the representative.. he was sooo careful when he said that..."it remains to be seen"..     即買即食係好食嘅,芝士 Keep 自取,送就唔供應,試下立食或者10個8個位, 唔入盒就好好多,應該唔係太難 🤔

      我見佢地芝士算係熱門口味,未來應該都需要keep,但要保持口味就一定要轉成芝士醬,既然佢地咁proud of自家出品,而家又有自家工場其實可以考慮自己調

    估唔到齊記原來都係齊柏林既,睇招牌根本就唔知🤣證明兩位老細轉數好快,抵你哋發達。
    講真齊柏林熱狗我好少食,最大既原因係因為無堂食,次次都要企喺街食其實幾麻煩。睇翻訪問都見到製作流程已經好難再維持現有外賣形式。希望開多d入鋪,開到可以同金拱門一決高下。

    芝士真係唔係問題 凍左會硬 係常識
    襯熱食真芝士 真係好正 😆
    但炸爐嘅油 真係要好好管理
    試過有兩三次 明明係晏晝lunch hour去買 d薯條完全炸唔起 又黑哂 😓
    明顯係油舊左 無換 照炸野畀客

    睇番因為佢芝士用左Mozzarella
    Mozzarella本身特性係好易變硬,但又要有視覺上拉絲效果,真係只有拎走果下短時間先做到
    純Cheddar,唔要拉絲效果可能仲好
    新鮮薯條呢啲咁易淋同有水氣就唔脆(因為無炸粉support)
    可以分開肉醬同芝士上外賣,但佢個芝士真係暫時坊間都係用芝士醬解決外賣😅
    如果似原產國加拿大整poutine,佢地係用原粒唔熔既Mozzarella🤣

    講句公道話~我試過買完即食(買完即跳上車食)同叫速遞外賣!買完即食真係好唔同,啲包真係下脆肉軟,啲薯條好脆好香~熱辣辣食真係好好食!用速遞外賣去食真係差到食一半都食唔落去!😅

    之前嘅流量菠蘿雞堡好好食, 雞肉嫩滑juicy, 加上其他配料醬汁令到整體好好食.

    若果熱狗的配菜同個包係有最佳食用時間,點解唔起店面大大隻字寫出建議最佳食用時間,或者收銀服務員,結帳後提提每位客人最佳食用時間;因為睇影片,老闆們對其外賣產品係大家都係一路行一路食,但大家買外賣都係拎番學校,屋企或公司慢慢嘆,因此雙方對外賣嘅定義有落差; 最後都祝齊記生意興隆💪。

    第一次食嘅時候佢哋仲未出名,就係喺荃灣嗰間分店!當時食嘅時候已經覺得好好食,估唔到之後開咗咁多間分店!除咗啲嘢好食之外最鍾意佢哋可以裸買!知道齊柏林麵包舖開咗,我都好想去觀摩下,但係屯門好遠,可唔可以喺九龍開間分店😊
    其實芝士僵硬化係芝士凍咗正常嘅物理狀態,咁即係買完之後要即刻快啲食咪唔會有咁嘅問題囉!

    其實d人外賣芝士但又嫌棄佢硬,真係好那個,芝士會硬真係好正常,如果唔想佢咁易硬就要加其他液體去開稀佢,其實Pizza都有同樣情況啦。當然齊柏林係太多芝士,所以你整體嗰個硬嘅口感佔嘅比例比較大,建議食外賣嘅食少芝士既選項。

    外賣,必然降低幾级,尤其是芝士,温度不夠便硬化,包亦會濕,所以外賣無乜可能與即堂食同樣。外賣必然正常,用腳行去店即買即食才中肯。。。兩餸飯,你試吓買炸或椒鹽,炒菜,返到屋企開盒也必然扣分。。

    平心而論,食過幾次真心說算是不差,價錢也是合理,味道也不錯,雖然真的芝士會變硬,但計時外賣就是這樣,所以心中是接受的

    第一次食好似係18年喺荃灣店,係個舊同事介紹,叫咗個芝士薯條,即刻食幾條,芝士軟薯條脆係食得幾開心嘅,但個地點實在唔方便食嘢,就走咗去附近荃新天地搵個地方坐低食,食到一半芝士成塊被咁,黐到啲薯條一大舊,好咸又食唔到,然後就再無食過了,估唔到仲可以開咁多間 😅,基本上幾襯熱食都好,芝士變硬速度好似唔夠時間食…食得咁急趕就唔係好啱我喇

    其實姨家微波爐都普及 會唔會有諗過芝士另放 自己到屋企先微波爐加熱加落去 咁會唔會好好多🤔 反正餐廳都係微波爐叮 想好啲嘅可以諗下研發一個專for芝士嘅膠碗咁

    由屋企附近間齊柏林返到屋企最多咪15分鐘,但啲薯條就算我主動解開袋唔困住水蒸氣都一樣淋哂
    淋哂唔緊要,我可以擺入焗爐翻熱。但翻熱完個舊芝士仍然係一餅嘢,唔好話拉絲,連融都唔融,仲係一餅嘢咁痴住薯條
    煎又試過焗又試過,最後食咗幾次就冇再買

    在新蒲崗買完15分鐘食 都仲好好食
    在屯門買諗住幾小時後食 店員幫忙醬另上 自己焗番熱塗醬 一樣好食

      Hot dogs in the USA is different to the ones that he is talking about wor... They are not "hot dogs" in Germany. More really classified as "sausages". 歐洲式香腸, 唔係熱狗 wor....
      The hot dogs that you get in the USA is probably some kind of Jewish type food.. cos they are totally different to sausages that are freshly made in Europe in general. Cos sausages is a classic historical food item, that is why there is a lot of varieties. King's and Queens have them. So you can see why it is traditional.

    好多野食都是趁熱食才最好食,熱芝士唔可以放太耐,應該主打堂食,兩餸飯的飯都好重要,要軟硬適中

    幾年前,有套戲係講M記既發家史。
    其實係有前車之鑑既(M記個套電影),加盟制係一定有佢既問題,正如片入面講。總店有規矩,每一間加盟都有大同小異既規矩,好難做到味道、質量統一既問題。🙇🏻

    其實想新鮮傻條炸到好食,一定要切完浸冰水,再分3次唔同溫度時間黎炸,咁樣炸出黎放半個鐘以上都仲會係脆。如果只係炸一次表面金黃內裡熟左就算,一定會淋哂。

      @@leongan1017 絕對唔會,只要花功夫做好事前準備就得。事前預先浸定薯仔再掠乾,然後低溫炸一次等薯條入面焗熟再攤凍放埋一邊;第二次炸就用高溫加厚層coating;第三次就係高溫短時間翻炸再俾d客。但當然要睇下佢地係咪咁重視薯條既質素啦

    真性情冇乜觀眾會唔鍾意,但喺有人哋老闆採訪嘅片就唔應該鬧得啲產品咁甘,咁樣慢慢其他品牌負責人唔會願意接受採訪,個系列好難再做落去
    可能以前果籽比較少呢方面嘅問題,但好似港聞財經冇耐就會出現呢啲報道同客戶之間嘅排版問題

      @@phoebewong1462 : You guys are playing with the fire, a little bit, to be fair... cos "social media" reaches the entire global audiences... and unless you have insurances as well. Your job is also to protect their interests too. Apple, my assumption is that, they were merely local HK circulation only. You need to control who you circulate to, and who you do not circulate to. Your back end, should be locked down in terms of your broadcasting and computers. Most "marketing" only appear once, or twice, and it disappears.. all of this kind of "tv programme marketing" (but you use tools that are international) is kind of asking for trouble. I bet you do not know this, do you ? I reside in the UK. I do not wish for my details to be scraped, and to be used. China, never locked down their internet, and they refused to do so. And because of this.. this is why you guys are in trouble... and it will affect many other businesses as well. As usual. This is why China, has a lot of legal law suits, being sued by other countries across the world.. because of their refusal to lock down... (This is not censorship.) Marketing is very simple. Imagine that, it is like the old paper format. I give out one leaflet, that is one promotion. Two leaflets. Two promotion. THIS is what you need to do. And no more. There can be many reasons why people will support a brand, and why they won't. For me.. I would support the brand, if I knew that, they support local businesses. But since, I have read about the German aspect.. I probably won't. Cos it damages and put my position in a bad way. But then again. I am not in HK right now, so I won't be able to eat those items... anyway. It's nice that they are using the old Garden Bread... but not really, if they bring in a German brand and sell it as hot dogs. (If you do business, then do fair business. Fair to yourself.. and fair to your suppliers. The way they are doing this, I can see why they are doing it this way... but... deep sigh. They cannot be fair.) He lacks those international exposures. Just cos the previous generation of people in HK had been doing things like this. This isn't how you do international business....

    其實如果佢係包裝到 著手會唔會可以保持到溫度,因為真係好似主持人講涼左之後變左好似成張被咁掀得開, 無左原先 d 芝士溶左落去薯條既用意 🙇🏻‍♂️

    Do you guys want to know, how come some franchaises, and some stores can deliver this kind of products, and keep the items still hot? This is because they keep those sauces, in a super hot water pot as well. And the temperature isn't necessarily just meet the food standards, it is actually a lot higher than that as well. Some sauces, depending on the base, retains heat as well. So the cheese will always also melt, this is a given. It does not melt, is because your shave-size is too big. Get a new cheese shaver... and turn it to smaller size. The heat from the sauce will and can melt it. So it does not look like a stuf big piece. Drop the heat gun. (No need to heat. Just make sure the sauce is super hot.) Also, pack it straight away into the box as soon as you put the hot sauces onto it. And then quickly wrap it. And put it into the box, and then into an actual container to retain the heat. Do that within minutes. So if you wrap this up. And handle it as a self-contained heated item. Then it won't lose heat. But if you left it open and do not wrap within 20 seconds. It will start to cool asap. So... Why do deliveries in the USA, they drive up to around 40 miles for their deliveries? They have both actual "cooking machine while on the go", as well as they use a lot of foils to wrap them too. Even a hot sandwich, they would use foil. But this is uncommon in HK. You have flasks, but you don't use metal boxes. If regular customers. Give them their own box! Even.

      To be fair.... I don't feel that, this is the right way to do things, by using "mystery" shopper. This demeans your own staff. Why not encourage them to solve the issue or the problem ? Yes, it is a franchaise.. but ask them about how they want to change the processes around.. and then put together tests that you guys can solve. So the food is cold... when it reaches the customer. Then test to see, how long... So the cheese does not melt. Do don't use the blow torch. But uses the cheese to be shaved a lot smaller so the sauce can melt it. And then use... also, add an extra water proof protective layer on the box, cos it is paper. Also, bring in a good customer service "front of house"... And then ask....for feedbacks. Every single day. Do that for a good period of one month or two months. "Why, why was it not good? Can you tell me what was that you do not like?"...(And give them a discount voucher.) Change your own processing method internally. Give feedback towards your own colleagues.
      Sure,... you can do things the mainland way, and it can always blow up and expand, but you do not always get the feed back back. Ever. The customer is ALWAYS right. The thing why Japan can work out, is because when they are good to the company, and the people are happy... their finances also go back to their same pot. And Japan is quite regulated with their financial sectors. So it is also often backed by their banks too. And the return rates to the locale.. is good. They are decent. Whereas if this was in HK. Then use local HK ingredients. Reuse and give back. And then compare the differences between the franchaisee that you bring into HK soil.. and becareful which one they choose, and how they are backed up behind them. Sure.. you can go for flavours and choices, but to be fair... IF you choose a good country, and a good management behind that brand. THIS itself will raise HK's profile a LOT more. I too... would be more proud of you guys, if you did this. Throw away junky brands. In the UK, most people buy from a co-operatives. i.e. The money goes back round in a circle.... it goes back in terms of taxes or business rates, back to the city. And then the city spend it in schools. Whereas in the mainland.. where does that money go? Not to people in HK and back to those schools... Definitely not... So... Often, people make the money, and then they go and run off !...
