Ingredients
Pure fish meat 1000g, I use frozen mackerel this time
around 350g or 400g iced water, divided (200ml for smashing and 200ml for blending)
2 tbsp. cooking wine
4 tbsp. sugar
3 tsp. salt
4 middle size egg whites
4 tbsp. cornstarch (optional)

I tried this recipe with frozen boneless basa from Costco. It doesn’t taste anything and the texture was smooth but not bouncing...like it suppose to be. I found in another blogger video that salt is very important and react with the protein to create and create the bouncing texture. We end up trippling the salt quantity and it was perfect. We also add chopped green oignon which gives a little bit color . The recipe gives almost 95 fish balls : )

Almost true for me - I find just as much if not slightly more satisfaction in UNDERSTANDING for the first time how to make something I was previously unable to make myself. For me, learning curves are almost as appealing as Feminine ones. 😊
Lady fish is the fish for balls

@@lfbisme they used mackerel, but if you don't like such a strong tasting fish, I'm sure you could use any firm-fleshed white fish, like halibut, cod or snapper. As far as your second question, at 0:32, they didn't add anything before the sugar, only the last bit of minced fish into the mixing bowl.

My mom always made this from scratch when I was a kid and knead the paste by hand. She advised that only a certain type of fish is ideal to make fish balls with. I think it is Mackarel, but she doesn’t know the English name.

In Malaysia, mackerel (tenggiri) or ikan Parang. Nowadays, recipes say any white fish eg garoupa, tilapia even cod

instead of corn starch i will use 100 pumpkin, in powder form. so it will be vegestable and fish with natural sweetner like blended mango. So it will be 100% organic fish balls no added sugar etc. I wonder if this will work with chiken.

Hi Elaine! I have a question. If I don't have flat beater for my mixer, can I use the wire whisk or the kneader instead? Cause I'm not using kitchenaid mixer. Or should I use food processor instead?

gosh, i never expect fishball is this hard to make.... ill just buy the ready to cook..
But this way, YOU control what's in the fish balls. Not only that, but you can add things to suit your taste, like minced garlic or chilis. This really doesn't look very difficult or time consuming.

@@RovingPunster hi lol it's all cool :) I just made them and idk my frozen fish was too watery or something cause it turned out sort of mushy and not a paste. Also my "balls" were more like deformed blobs but still edible in the end

Wait a sec, they float when they're raw in cold water (1:38), they also float at the start of cooking in hot water (1:46), and we're supposed to cook them until they float (1:53) ? That step merits some clarification. 😉
It was because the cold thing ia heavier than hot thing

There may be too much moisture in the fish. Using fresh fish would help because some fish do not freeze well and take on water.

Mine desintegrated as soon as they touched water... So there's something missing in this recipe.
It's probably lack of Gluten the same concept as we kneed the bread dough in order to achieve stretchy dough you kneed it for a long time
I do a quick 15-minute version (though this recipe here is no doubt superior)... I've found the type of fish makes a BIG difference.

Can it be any type of white fish? I did frozen pollack last week and it came out grainy and a total failure. It didn't even hold up its shape. No water added at that moment when mixing. I was only able to succeed one time(my first time ever but i forgot the recipe). Looking back i didn't even think about saving it. I need to know 🙏 i want to get aome fish from the store now.
Maybe you can try it. The key to success is to grasp the ratio of water to starch and adjust it while stirring. Don't put it all in at once because this ratio is related to the fish you use and the ambient temperature at that time.

Hello, I added some white pepper and used 350ml of water instead of 400ml. When i do the test, it does not float like it does in the video. Could the additiomal pepper i added during the mixing process affect the overall result of the recipe?Thanks
No. The pepper does not influence test, only water amount and your blending time. If it doest not float, add more water (2 tbsp each time) and continue blending until the mixture pass the test.
What kind of fish can we use? I tried with frozen white fish. It was a disaster! Not good at all. I don't know what went wrong but didn't turn good at all!!
