This isn't accurate. Powdered sugar is just regular sugar, just powdered. You can make your own powdered sugar out of regular sugar at home if you have a good blender. The main difference with powdered sugar is that it's more fine, and you can pack more powdered sugar in the same space that you could pack table sugar into. More sugar = more sweet. This is the main reason they tell you not to pack certain dry ingredients because you can add way more of that ingredient into a container when you pack it vs when you don't, and if will throw off your ratios.

Pineapple do have a lot of the protease enzyme bromelain, which is why it hurts your mouth to eat a lot of pineapple, the enzymes are actually eating proteins that make up the inside of your mouth. Kiwi fruit also have a lot of a similar protease enzymes that make it hurt to eat a lot of them. The enzymes are deactivated with cooking though so eating lots of these cookies won't be painful in the mouth.
I don't know about kiwi. My best friend growing up had a contest with another kid in our class when we were in the 5th grade. He ate 44 kiwi halves before the lunch lady cut him off, and the only pain he reported was from the wicked squirts he got at home after school.

Great animation! For the title, I personally think that instead of "Can This Chef Recreate My Childhood Cookie?" I could've been nicer as "Can Rie Recreate Niki's Favorite Childhood Cookie?" It would be more personal towards the many of us that love both Rie and Niki. Or the title could even have been "Can My Friend Recreate My Childhood Cookie?" Idk, just a thought

Pineapple do have a lot of the protease enzyme bromelain, which is why it hurts your mouth to eat a lot of pineapple, the enzymes are actually eating proteins that make up the inside of your mouth. Kiwi fruit also have a lot of a similar protease enzymes that make it hurt to eat a lot of them.
The enzymes are deactivated with cooking though so eating lots of these cookies won't be painful in the mouth.
So basically, while you eat the pineapple, the pineapple eats you

I don't know about kiwi. My best friend growing up had a contest with another kid in our class when we were in the 5th grade. He ate 44 kiwi halves before the lunch lady cut him off, and the only pain he reported was from the wicked squirts he got at home after school.

we call this nastar in indonesia, acronym of anaNAS (pineapple) TARt. people said that in the past Dutch used Nanas (which was available) as substitution of blueberry and strawberry jam to make tart and called them ananas tart. a perfect combination of european recipe and asian taste/ingredients 😁

In Indonesia Its called NASTAR (Nanas (pineple) + Tart (Cake)). Usually served when iedul fitri mubarak after ramadhan end.
The shape usually like a ball with pineple jam inside. But there's also like a little flower shape.
