    About Michelin Sushi Chef Tetsu:
    His family owned a sushi restaurant in Saga Prefecture in the Kyushu region.
    Chef Tetsu grew up close to sushi and Japanese cuisine from a young age.
    He later went on to pursue a completely different career path, but when his father closed the sushi restaurant, he vowed to revive it.
    In November 2007, he opened his first restaurant, "Yamasa Shoten Sushi Yoshi" in Saga.
    As a consequence of the restaurant's popularity in Saga Prefecture, Michelin researchers visited the restaurant.
    The restaurant was listed in the Michelin Guide twice. (2014, 2019)
    In June 2019, he opened "Sushi Yamasa" in Nishinakasu, Fukuoka, offering the best time and sushi to customers from home and abroad in a restaurant overlooking the night view of Nakasu.

      Thanks for the question! According to the detailed research, it seems like a cutting board made of a material called ethylene-vinyl-acetate (vinyl-acetate).

    If you don't explain what's in the broth, then the video is not fully instructive and can't be repeated at home. Then what is the use of the video?

      Stock would be dashi, but the stock who knows 🙄 would have been nice if they would have given a slight description if they didn’t want to disclose the full recipe.

      Octopus is almost always sold packaged, so it is true that you may not see this process very often.

      We think it's a GOOD idea to take the skin off the Octopus as it has a hard texture. In the traditional Japanese method, some restaurants allow the skin to be eaten as well. (The technique in this video may be helpful.) We hope you'll try to arrange it according to your cooking! :)

    octopus should not ne eaten - octopus are far too intelligent. You will be judged.
