Another fabulous potato dish from Spain on a Fork. I love that all (most?) of them do not skimp on the olive oil. I would transfer this entire dish right into my mouth - forget the serving dish!

I made the meal this very afternoon. I chose not to deep fry the potatoes, but cook them separately in the air fryer, with the garlic roughly chopped plus some chopped onion along with it. To promote it from side dish to main dish, I thawed something precooked from the freezer. A simple yet tasty and economical meal, as simple to cook as anything. My one criticism is the addition of the wine after adding the potatoes; the liquid, despite being evaporated, removed the crispness from the potatoes. If you live in Spain, Mercadona sells the already chopped parsley and garlic in a tub, meaning no need for grinding it together. I made this recipe for lunch today. It was very tasty. The only thing is that adding wine at the end softened the otherwise crispy and golden brown potatoes, which looked pretty much exactly what you posted. Once I added the wine, the crispiness ( which we love ) was gone. Do you have any suggestions to remedy this? We could omit the wine, but that would alter the flavor and we'd rather not do that. Thanks!
Why did you put inside the potatoes 3 garlic cloves unpeeled mix it together with the mushrooms.Served the potatoes to a plate and never took them out? What was the point?
That notion has actually been debunked since the '90s, and even more recently by Alton Brown. A pile of mushrooms can even be soaked for a few minutes then patted dry and the pile will only retain aboutb 1/16 of a teaspoon of water by weight. Although as already noted, best to use them so9n after washing. Also, their flavor (glutamate) is inside their cell walls so can't be rinsed or washed away. Mushrooms are awesome!

The potatoes are not meant to be crispy here, just cook the wine until reduced and then pour over the crispy potatoes :) Much love
I don't get the idea of eating garlic cloves with skin (paper) intact or were they removed before serving?
The skin prevent to overcook the garlic, which adquires a delicious tasty, creamy and "noissete" flavour.
