Regarding the Fallen, the vast majority of them were tricked or misled. Very few actually turned Traitor. The Lion is killing the genuinely heretical and traitorous ones, and only bringing those that deserve redemption with him.
Yeah, for more information read Lion Son of the Forest. It shows off the fact that many Fallen had no idea what was going on, other were traitors but non-chaos, and others were completely corrupted.
My favourites are the Dark Angels, Ultramarines and Blood Angels. Also in the latest lore, on the Dark Angels fortress monastery the Rock Lion walked into a room with interrogator chaplains torturing a captured fallen, he told the Chaplains to leave while he questioned the Fallen alone. Some time later Lion walked out of the room and told the chaplains to continue the interrogation and leaves.

there is one interesting story about Konrad Kurse. He once had a double vision. He was pursing some ganger kid, when he saw that the kid would be cornered in an alley way and if he let his guard down the boy would be raised as a true son of the night haunter bettering both their lives, however he also saw that if the boy has his knife when Konrad got closer to the kid he would be stabbed and the kid would get away tarnishing his reputation forever. Konrad's response was to just kill the kid only to see after that the knife was dropped outside the alley.

technically reforming the legion isnt outlawed or banned by the imperium, as the codex astartes just sets the limit of 1000 members to a chapter and its up to the chapter (or legion) how much they want to follow this rule. the Inquisition does tend to look at chapters that are suspected of legion building and said chapters tend to run into alot of suprising "acidents" for beings that are decribed as demigods. The rule/law not existing is splendidly showcased by the black templars who are by last account, are over demi-legion sized (6000+ battle brothers)
The Last Wall Protocol isn't really known outside of the Imperial Fists, and the necessity of the various Chapters descended from the original Legion coming together is not unusual, especially if it's regarded as a temporary measure meant to consolidate a force to reinforce and defend Terra in the event that the Imperial Fists Chapter is decimated and needs to be rebuilt. After all, Chapters get rebuilt quite frequently and Guilliman never said that the Chapters couldn't cooperate and assist one another, only that the Legions be split up and compartmentalized so that no single commander has the strength of a full Space Marine Legion at their disposal. And to add onto this, Guilliman also fully admits that splitting the Legions into Chapters was a temporary measure to weed out potential corruption and compartmentalize it, and that die-hard Loyalist Chapters like the Black Templars would be the first step toward rebuilding the Legions when Guilliman's sanctions were no longer necessary.

There are two night Lords who are noticeably not as bad as the rest, Talos & Sevatar. statistically speaking the night lords are the most successful Legion, there enemy's would rather surrender than face them, meaning there casualty rate was lower then other legions.

fulgrim's traitorus turn isnt that contentious he first beomes tainted by the kaer sword but does make traitorus decisions all the way till istvaaan 5.he purges his legionn, lets fabius bile do heretical experimentation and does try to bring Ferrus on side before the dropsite massacre. he made these decision not the laer demon
From the start Jaghatai had doubts about the Emperor's plan and how he was hiding stuff from the Primarchs. Matter of fact I think Jaghatai would have opposed the Emperor back when they first met if he thought there was a chance of winning. This is even part of why the White Scars would operate almost independent from the rest of the crusade and why he only chose a side after seeing what happened at Prospero and meeting Mortarion there. It's only during the Siege of Terra that he begins to learn about things like the Webway Project and starts seeing that the Emperor had an actual plan that was beneficial to humanity. Oh... And the roast god thing is because of an exchange he has with Fulgrim where Fulgrim says something like: "Jaghatai, they say you do strange things to your ships" and the Khan replied "They say you do strange things to your men"
He also earns the title of "Roast God" for verbally eviscerating Mortarion in both of the two fights they had. I honestly think the Khan's sick burns did more damage than anything else.
Fun fact. "It's raining men" and "Let the bodies hit the floor" functionally describes the same scene from different perspectives.
