Bit O' Honey is also one of my best sellers. I've found that it's even faster to just unwrap the ends of the candy and cut while still in the wrapper. I put two next to one another and cut through the wrapper, cutting into thirds for consistent sizes. Then I take off the wrappers and it makes it so much faster and fewer times to handle each piece of candy. I can do the entire prep for all five trays in about 17 minutes. Everyone LOVES these!
I've found that pulling the ends of the candy wrapper but not taking them off, and THEN cutting them works great. Since I cut into thirds, the pieces of candy pretty much fall out of the wrapper when you just crunch the wrappers around. I also count out the candy into how much will fit into a tray so its already in tray sized batches and I load the trays in batches.
I also found trying to cut them whilst in the wrapper, sometimes pieces of the wrapper got stuck in the candy and had to be picked out. But it can work.
I don't know that I will ever freeze dry candy but it I do, Bit-O-Honey is at the top of my list. It's probably my favorite candy but I don't really eat candy anymore.
I have a small cottage business with freeze-dried candy and treats I struggle with the labeling I'm debating on whether to buy a rubber stamp or continue to purchase high-grade labels keep up the good work I enjoy the videos. By the way the layout of your website is absolutely beautiful
Thanks David. It is a lot of work and people don't understand that is a labor of love and not a get rich quick thing. Anyway thank you and keep up the great videos.
Thank you so much! I noticed you don't have a tray on the bottom shelf. Is this your standard for candy? I've had trouble with candy on the bottom shelf. Also, do you have any experience wrapping your rack in foil? Oh, and my bit-o-honey was brittle enough that I could just snap them in half. It was definitely quicker than having to cut them.
I've done milk duds and snickers and both turned out really good. The issue is that they very delicate so packaging them would be an issue with them getting crushed.
I definitely watch your videos. We appreciate them. I’ve also used quite a few of your affiliate links to buy products. One thing I would caution or suggest: shouldn’t sharpen your knife over your cutting board. Does have small amounts of metal when you sharpen the knife and could go into the candy.
I need advice. Just did my first cycle last night. Had it on candy mode. I fell asleep and when I woke up this morning inside the machine was full of ice and I went to take out the candy, because of the condensation the candy was ruined. Any advice?
This video shows my recommended products and I still sell these today Top 20 Items to Freeze-Dry for Your Freeze Dried Business ruclips.net/video/neZYov6iQ2M/видео.html
If you have a harvest right, go to your customize screen before you start and you can select what the final dry time will be. If you have the latest software installed it will give you the option for candy mode
I’m interested in starting a business to sell freeze dried candies because I tried this exact flavor!! Question… do you recommend using a mat with the individual holes for each piece?
I do recommend using the silicone mats for certain candies that I don't to come out clumped together. For Bit-O-Honeys you don't need the mats with the holes. I would use them for Caramel M&Ms, Jolly Ranchers, or other large expanding candies. Use my referral link to buy through Harvest Right please, thank you! affiliates.harvestright.com/1974.html
Notice you are using the mats in your trays….do they significantly reduce sticking? We’re considering getting a set or two….just wanted to get some pros/cons from a regular user. Thanks and appreciate the videos! 👍
Great observation! No they do not make a difference and I haven’t found Bit O Honeys to be sticky at all. The mats are handy to have but you don’t need them all the time.
Correct, I freeze dry branded candy but I don't use the brand name in any manner (title, description etc). You need to chat with a trademark attorney for exact phrasing but you could say something in the description of your ingredients like "XXX is a trademark of YYY. (blank) is NOT associated with or sponsored or licensed by YYY in any way"
@@freezedriedbusiness I know if we buy chocolate from Hershey wholesale they let you use the logo and name going to look into it more for other candies. Great channel new fan👍
Dude this is my favorite candy ever! I missed buying it at the store today because I'm going to do my first time trying to freeze dry some Skittles and I bought some hot tamales. I've had my freeze dryer for 3 years just freeze drying fruits vegetables meat. I'm very confused with what you're talking about with warming the trays first and then freeze drying for only 3 - 4 hours. Everything I've learned you have to have the items frozen and then go through the process. Are you not freezing these candies? Because the freezing process takes like 9 hours I think.
I don't freeze any candies, I use Candy Mode with the 5.0 Harvest Right software or higher. If you have an older software, just bypass the freeze cycle by "canceling" once it's done with it's pre-freezing the chamber mode.
The Bit O' Honey is not mentioned anywhere in the video you linked of the top 20 things to freeze dry. (And you just said that it's your top number one. ??) Just a little confused.
Good catch, I put that video out so long ago that I sometimes forget which candies I mention and which ones I didn't. The Bit O' Honey is still one of my top sellers so I would recommend doing these candies for your business. Hope that clears up the confusion and thanks for watching!
Make sure you have the latest software, 5.0 or higher. Follow instructions in the manual to activate candy mode. Depending on the candy it should take 2-4 hours to get them to pop in texture and dried enough to package.
I use what I believe puts me in the best position to be successful in my business and having large machines and support is my priority. Harvest Right currently meets that requirement for me but I have heard of Blue Alpine and I’m interested in understanding their machine this year hopefully with an in person visit
@@freezedriedbusiness that's good that you're able to get good customer service from harvest right. I've heard a lot of bad reports from single unit sales from them. And not giving good customer service to them. Blue Alpine, being in Idaho could be easy to get a hold of , if any issues. I was able to pick my machine up and saved $100 and they gave me another set of trays and matts free as well

Thank you .
Thank you so much for the compliment! I can look at adding that to much schedule for this year for sure
150 - 15 min tray warm 4 hr dry and they come out light and fluffy like taffy 🔥

They are crunchy once freeze dried so perfect for people who don’t like candy that sticks to your teeth

Since posting this video, I agree with the candy wrapper on method and then cutting.
Thank you so much for exact details on freeze drying candy. This is a blessing.

It’s a fun candy to freeze dry but even more just a great tasting candy
Do you use O2 absorbers and heat seal the bags??? If not how long does candy and fruit last ??

Hey David thank you for your videos. You should try quail egg scissors……yes I did say that…..

Ok will do
So skip heating all together? Are you in candy mode? What did I miss?
Have you ever done malted milk balls in freeze dryer? If so did they turn out good?
I've done milk duds and snickers and both turned out really good. The issue is that they very delicate so packaging them would be an issue with them getting crushed.
That looks amazing. What temperature are you using?
140 degrees for about 2-3 hours
Do we warm the trays for candy mode?
I do not but it wouldn't cause them to not pop. In fact it would probably make them expand more.

If that happens, just run it again for 2 hours or so. The other option is to warm the trays once the cycle is done and it will dry up the moisture.
How can I know what to FD with the bit o honey please. I need to fill 5 trays. Please help. Thank you!

I'm sorry if you said, but what size freeze dryer is that?
It's the Large Harvest Right, I have three of them for my business: affiliates.harvestright.com/1974.html
Hello. I don’t get to choose how long to freeze dry something. Are you saying the machine should ask me how many hours to freeze dry the candy??

Have u trying heating your pans first in the oven then put them in your machine when turn on your vacuum 10 to 20 mins your candy done
I don’t typically do anything in the oven since I’m in a commercial kitchen and we don’t have an oven.

I believe that’s only if you resell what you bought but freeze drying is “modifying” the product so then it falls under trademark laws
