Go to all the effort of beating up egg whites...then "whisking" them in so vigorously...she completely deflated the fritter batter
Should have been lightly folded in...to preserve lightness and volume...like a souffle
Plus...dice up apples or at least cut a thinner ring before dipping in batter and frying...that fritter wouldve been like chomping into a wagon wheel
