That raspberry mousse made my mouth water. I use to stop at La Petite Boulangerie and have a fresh croissant with a skiff of delicate raspberry jam and a coffee before work every morning...Heaven. Then someone bought the bakery, replaced that heavenly raspberry jam with a tablespoon of cheap strawberry jam and raised the price fifty cents. That was the end of that!
i wish i could meet Mrs. Berry! And had her for a teacher. because i have seen cooks or ches on tv. but this lady is quite another book! and she is a Chef as well. it would be such an honor to work under her. she makes everything stress free. watching her cook reduces stress for us who wants to entertain, but stress our own selves out withwhat food to serve and decor. i'm telling anyone to watch her. i just got home from work and watching her already.!im sorry i never watched her before. i mean dinner that we spend so much time trying to figure ut how to make, she does it without having 50 bowls of seasonings and spices on the table! 1

That chicken marinade is yummy! But I do always season the chicken separately with salt (a coating of salt over the chicken, yes on both sides) don't want it to be bland and a good pinch of freshly ground black pepper.
The fan refers to a convection oven with a fan circulating air which speeds cooking ~ in a standard oven in the US I think its about 425 degree fahrenheit.
When it's cooked well, like Mary did here, it is very crumbly and tender. And it has a distinctive earthy, gamey flavour, that's why it goes so well with sweet sauces like cranberry, port wine and so on. I've never had goose, but I suppose it is in that direction
I made this today and it came out perfectly. I baked it on 210 celsius for 20 minutes then 180 celsius for the remaining 15 minutes. It became a very delicious meal.

Although that table setting is magnificent, you can't converse across it as all the design is obstructive. Not conducive to a Dinner Party. Perhaps a "feast" requires no conversing, just eating and adjourning to another room?
I idea is to be seated next to people that you would find unique, interesting and entertaining. You converse with the people seated to your right and left and not across the table. You do not have a single conversations going on but rather multiple small conversations.
Who are the guests Mary??? Do not forget millions of hungry children who would be fed with this waste for long... and they need only a piece of style bread and a glass of clean water

What is "200 degrees fan...."??? for those of us in the USA
200 degrees centigrade and some ovens have a fan in them to circulate the heat for more even cooking.

I read so many recipes with Celsius rather than Fahrenheit I keep a conversion link on my toolbar! For the middle 70% of cooking temps you can 2C=1F.
In America we call it tartar sauce.
