  • Pol sambol (Sinhala: පොල් සම්බෝල), thengai sambal, or coconut sambol is a traditional Sri Lankan dish made from freshly grated coconut, shallots or red onions, dried whole chilies or chili powder, lime juice, and salt.
    It is a great condiment to add onto other foods such as rice or meat, or it can be eaten as a side dish. Even use it as a dip for your potato or tortilla chips!

    I had this while visiting Sri Lanka, and now I make it at home! It is delicious.
