Black Sesame Campagne
Banneton 28x13x7.5 in height (cm)
Poolish
Lukewarm water 80ml
Instant dry yeast 2g
Bread flour 70g
Main dough
Bread flour 470g
Black sesame powder 40g
Poolish whole
Lukewarm water 330ml
Salt 8g (1 and 1/2 Tbsp)
Honey 20g (1 Tbsp/can be omitted)
1. First, prepare a Poolish(pre-ferment). Mix the poolish ingredients in order and wait until it doubled in size at room temperature. (About 1 hour-1 and a half / hours may vary depending on the temperature of the working environment.)
2. When the Poolish is done, prepare the main dough. Add all the ingredients to the mixer. Begin to knead for 2 minutes at the lowest speed of the mixer. When the dough is mixed evenly, increase the speed to 2 and knead for about 7 minutes more.
3. Transfer the dough in the container. Let dough rise at a room temperature. (*Wait for 30 minutes - First folding - Wait for 30 minutes - Second folding - Wait for 30 minutes)
4. Transfer the dough to the workbench and shape the dough. Put the smooth side of the dough to the botton of the banneton basket.
5. Let dough rise in a warm place for about 40-60 minutes.
6. Place the dough on the baking tray. Score the top and bake for 25 minutes at 230 degree.
