You can proof the bread in the refrigerator. It slows it down. It still rises, but slower. Cover it, too (clean dish towel or plastic wrap). The hard outer coating that forms on uncovered dough is probably what kept the first one from rising. Good luck.

It occurred to me that a brand new shower cap would do the se job as damp tea towel to get dough to rise.. love reclamation yards they're a gift aren't they.

The light will create just enough warmth to stimulate the rising. Actually, your focaccia looked great. I've never seen it any higher. Congratulations!
I noticed that the wall with the floating trees has a door on it that looks quite old. That wall must have so many historical stories. Do you know how old that brick wall is? Your garden looks incredible!
Focaccia is dry because you should have covered it to keep it from drying out when you proofed it. The other possibility is your oven May be too hot or you cooked it too long. Check RUclips re proofing.
Your suppose to put a damp tea towel over the dough and set it in a warm place to proof. This is when the yeast ferments and causes gases. The dough will grow and and fill with gas. You literally can punch it and pop it. Sadly yours wasn’t warm enough. If the dough doesn’t rise where there is gas in the middle then you know it didn’t proof.
You need to cover dough stop a crust forming ontop but no rise means no yeast in the dough or the yeast and salt have touched each other and salt killed the yeast.
Would there be a space in a quiet corner of you woodland for a spider safe shed for me 🤗to craft in .... the beautiful greenhouse and gardens...Porter and Lumi playing on the lawn ... the smell of cooking... I really wouldn't be any trouble... Stay safe stay well xx xx

Pls remember not to wear fragrances when you handle the bees 😂 And never ever ever attempt to grab a knife when it’s falling. I have a friend getting stitches with that reflex action. Also not allow small animals near when you are cooking or handling knives.

From a girl that fell in love with a Genoan (the city of focaccia and pesto)😋😋 I'd recommend leaving the dough in the oven (turned off) whilst proving and using a mixture of olive oil, water and salt over the top of the dough. Hi Ali, over-proving can have as much detriment on the outcome as under proving when it is cooked but am sure it will be delicious anyway 👍🏻💙
