      +Laura G Hi! It will last one week in the fridge, and the longer it sits the less sweet it becomes. It is a good idea to burp the bottle once a day because it keeps carbonating even in the fridge. All the best!

    Thankx for telling not to fill up the glass bottles! I did this and one bottle exploded during the night! I also did not burp it! Will try doing it your way and see how it goes! Greetings from Germany

    I took your advice and I tried the lemon/lime soda pop first. I made a rather large batch of the ginger bug and it turned out great - saying the smell would be sweet was good. As I watched for it to become nice and bubbly, I also kept smelling it, it was a nice and sweet smell. I ended up making two gallons worth (using organic ingredients). It was terrific and now I am back to try the Ginger Ale. Thank You again for making this process, one that was so much fun. I like ginger but was a little apprehensive of trying the ginger bug - I knew it was a Healthy choice but didn't know what the end product would be like - It was Terrific ! I also will check out some of your other videos - the caramels look delicious:)

    How gifted you are and cute too! (not flirting I'm 62). I also paint watercolors. Curious to know the actual painting time of this piece. Was it in one sitting or over time.     Thank for your response.
    I did everything right. It could be the water. I did finally get ginger bug ,but it's not that fizzy. I waited for the ginger to cool before adding in the bug. Have placed it above the stove in a cupboard where it's warm and dark.
    Do I need to stir it daily? I know I have to feed it daily. How much ginger and sugar? I know one can over feed a ginger bug.
    This ginger bug is bugging me. I really want it though.. I am being patient.
    At first I couldn't even start the bug , now I have that and can't start any fermented drinks..I guess I need to throw out my cider and ginger tea or can I drink it flat?

      Thanks so much! :) stirring or shaking aerates it which is always good...i feed it one teaspoon of sugar & ginger per feeding (that's with 2 cups of water) both when I was starting it and now when I maintain it...many sites say to use a tablespoon of each but that is a lot. plus, always leave the lid a bit open for oxygen...some people fasten a coffee filter over the jar with an elastic band. I can't see any harm in drinking the cider & tea flat, but I would personally start fresh. I think your ginger bug will improve the more you use it. I make sodas at least once a week and it is already bubbly when it comes out of the fridge...it was not that aggressive when I first got it going...and one more thing...if you happen to have another culture of some sort ( kefir, sourdough starter, yogurt etc.) keep them far away from the ginger bug...they will slow it down. Keep trying and enjoy your homemade sodas! :)

    Another item that works great for fine filtering but is WAAY faster than a coffee filter is a milk filter. You can get them at any farm supply store. They are amazing. I just press mine into a regular funnel making a cone shape with the filter and pour my liquids through.

    Thank you. This was very helpful. I'm just starting to work with ginger bug and it was difficult for me to know if I was doing it right without knowing what it is supposed to look like. For example, how bubbly is 'bubbly'? And another concern I was having was regarding about my jar becoming so full of ginger bits that I stopped putting fresh in. But seeing your jar all full, I'm more confident.

      Glad it was helpful...a full ginger bug is a happy ginger bug! Whenever you add it to your wort allow some of the ginger to go in with it, that way there will be room for replenishing. Enjoy!

    My ginger bug has been providing us with over a year's supply of ginger ale lemonade and it is always a winner thanks to your easy to follow directions... So I was wondering if it is possible to make just a plain soda by simply heating water then adding sugar and when cold add the ginger bug... what do you reckon???

      Thank you for the nice compliment! If you want to make more soda within the next day or two, then leave it on the counter. If you think you won’t make more soda for a long time, then put it in the fridge-this slows down fermentation and will keep for several months :)

      You should be able to get it going again, give it another feeding and wait for it to ferment.

    Hi there! Love your videos! Thanks for posting them. Question... I used my bubbily gingerbug and doubled the recipe. So far, no carbonation! None! Nada! Zip! Its been 48 hours. Its a little on the cooler side in my kitchen, but not crazy cold. I wonder if, because I doubled the recipe, I should have used more bug? I can't figure it out, but am really bummed. Any thoughts?

      Hi there! Thank you for the kind words! Yes, you would have had to double the ginger bug also. Did you only use quarter cup? If you did, add another quarter cup. Also, it has taken my sodas as long as 6 days to carbonate during winter, so hang tight. Hope this helps!

    Hello Paul. I come to you again in need of your sage wisdom. I worked through 2 dead ginger babies and finally got the third one strong enough to start a brew. I was very excited. However when I got to filtering with the coffee filter the process was so painstakingly slow I just used a strainer. Is there a reason why my coffee filters are going SO slowly?? Would cheesecloth be a better move? Perhaps there's something less fine than coffee filters but finer than a regular wire strainer?

      Hi! These days I don’t bother passing it through a coffee filter for the same reason. That step is for those who want a very clear soda, but it isn’t necessary. If you do want it clear, cheesecloth does work better. You can also buy ultra fine strainers from professional kitchen suppliers, but they are very expensive. The sediment at the bottom is part of the charm of any ginger bug soda or kombucha, so just strain and don’t sweat it. (Just put a “do not shake” disclaimer on the bottle if you are giving it to someone!)...:)

    Hi Paul, many thanks for this very instructive video. I live in Thailand and am currently on the second day of my ginger ale ferment. I released the gas this morning and the mixture is very very gassy (blew the top off my plastic bottle) Does that mean it is done or should I carry on for a couple more days - it is very hot here in Thailand. If you can advise please let me know.

      Hi! Yes, your ginger ale is ready! Now chill it in the fridge and the fermentation will slow down. It won’t be as bubbly when it’s chilled but if you leave the bottle out for about 10 minutes before drinking the bubbles start to come back. It will taste best if you drink it within 3-4 days.     Hi Paul, thanks for this video and recipe. Last night I started the soda and my ginger bug is definitely bubbly. This morning I went to burp the bottle (10 hours after starting it) and no gases had built up. Is this normal? Does it take longer at first to get going? It’s about 74° in our house. Thanks for any tips!

      Hi! Give it time, ginger bug takes a little longer to carbonate soda when it’s new...it once took 6 days for my ginger ale to get bubbly, sounds like it’s warm enough where you are. As long as your bottles are nice and clean and well rinsed of any soap that may kill the bug, it should work. :)

    Paul, I have been making sodas using ginger bug for a number of years, and this year I been trying my hand at wine making and have had great results making grape wine. I would like to make a mango wine with a slight mint taste. Could you tell me how to go about this? By the way, I also paint Orthodox Icons, more properly called writing Icons.

      I love that you’re an artist too! I wish I could give you a proper answer, but I am not experienced at wine making so I am the wrong person to ask. To get the mango-mint flavour however, I would make a simple syrup with the sugar and infuse it with mint leaves while it’s still hot. Once cooled I would add the mango juice and proceed with fermenting as per wine. I hope this helps :)

All of my cooking experience came when I was a student in the monastery training to become a priest in the Orthodox Church, cooking mostly middle-eastern foods. Since Orthodox Catholic priests are allowed to marry (must do so before ordination) I left monastery for a short period to get married , but returned afterward to finish my studies. My late wife and I then adopted four boys from Vietnam, and they taught me how to cook many Southeast Asian dishes. Now I don't know which I enjoy more, cooking or painting.

    on the liquid , it was not foam or bubbles. was it good or bad . thanks

      Hi! Are you sure they are not bubbles? Mine always looks like white foam when it first starts fermenting. What about beneath the surface, in the ginger ale itself...do you see bubbles starting to rise up from the bottom of the bottle like soda?

    When I burp mine a ton bubbles come from the bottom creating lots of gas. Is it okay to close the lid on it again after a few seconds like you did? Or does that build up too much gas after closing it on all those bubbles?

      I let the bubbles settle down first, then close it. Put it in the fridge to chill right away and the fermentation will slow down, but still burp every 8 hours to be safe :)

    Are you sure your ginger bug needs to be all fizzy? Cause my jar is LAYERED with cloudy yeast at the bottom and smells nice and sweet. But not a single trace of bubbles.

      Thanks! Yes just until carbonated, then it can chill in the fridge. Burp it once a day from then on if it lasts that long.

    Hi paul ! I made a ginger bug soda 3 days ago with some orange juice but today the liquid in the bottle is very syrupy ... There are a few bubbles appearing on the surface which proves that the ginger bug is doing its work but i think that something went wrong ! Did i put too much sugar or is it a normal result when using orange juice ?

      If it was pure orange juice I would think that it was too acidic for the ginger bug to take full effect. Ginger bugs thrive in sugary environments not so much acidic. I would cut the orange juice by half and replace it with water...then add sugar and ginger bug and see what happens then. I hope this helps :)

    I'm gonna make some of that! Looks like fun and better for you than regular soda!?! One question though. Once the soda is carbonated and ready to drink from a glass bottle like yours do I have to always burp it even if I drink half of it? Will it explode if I don't burp it every 8 hours? That's kinda scary! Please let me know.

      Hi! No you don’t...you will want to keep it in the fridge and that slows down the fermentation and it won’t explode. I have let gas build up in some bottles for days (at room temperature, when I forgot) and I have never had an actual glass explosion...just a very messy ceiling and floor! :)

    Hi Paul!! i have another question :S
    i made the wort, but i didn't have a chance to mix it with the ginger bug
    it was in the fridge so it would cool off for the whole night, then i took it out and again but something came up and i couldn't mix in the ginger bug, the morning i opened the bottle and it smells kinda yeasty
    my question is, is it still good? can i still make ginger ale with it? i haven't mixed it with the ginger bug :S

      Not sure why it smells yeasty, but I don't see how it would be bad. I would try it anyway since all you have to lose is a little ginger bug. If you add a little more lemon or lime juice that might reduce yeast taste :)

    The long glass bottle with the swing lid is not found here..... Can I use a regular mason jar with tight sealed lid....also how do u sanitize the long bottles, would It not be easier to sanitize the mason jar after each use?

      Instead of a mason jar, use a regular recycled plastic pop bottle with a
      plain screw top lid. Mason jars are not meant for carbonated liquids
      and I would not want it to explode on you. Plastic bottles are great
      because once they feel very firm, you know ginger bug is working. To
      sanitize, use white vinegar with warm water, 50/50 and shake it well.
      You can also get bottle brushes from most dollar stores--I often use
      these. I sometimes use plain dish soap, but you have to rinse this out
      many times because if any trace of it is left, it can kill the ginger
      bug. Happy Soda Making! :)

    Hello! What do you do with the residue after you use the ginger bug for your ginger ale? Go to compost? or you put it back in the jar?

      I dice gingers, so most of my gingers are on the bottom of the jar. Because I keep feeding them, the amount of it is increasing...

      You throw it away. The ginger you re-feed it keeps it stocked. If mine gets overloaded with ginger I scoop some of it out. I find that it ferments better when there is room for circulation. I hope this helps :)

      I think grated is better, but chopping works too. I do both. I believe grating it makes for better aeration during fermentation.

    I know this may be a dumb question but Do you have to burp it once you start the refrigeration process? Aka after burping it every eight hours for 2-3 days during the bottling process?

    Hi Paul. I tried making the ginger ale and had no fermentation ...very frustrating as at first I couldn't get the ginger bug going.
    I use Britta filtered water could this be the reason? Also when making the ginger ale I put all the ingredients into the pot and boiled it ,. Do I need to follow the exact order as you show in the video? Also put some ginger bug into apple cider but it's not fermenting either it's been 4 days.
    I get upset when I hear that people can hear the fizzy sound from the fermentation ,and that you have to burp it or it will explode. My fermentations are almost flat..what am I doing wrong. Please help

      Hi! I am sorry you are having a hard time getting this going :( ....first, you want the ginger bug itself to be bubbly before you add it to a drink you want to carbonate. Is your climate very cool? If it is, that may be the reason it hasn't become bubbly yet. Just be patient and it will. Also, was the jar you made the ginger bug in totally clean AND rinsed? Sometimes traces of soap residue left behind can kill the ginger bug....When you say you added all ingredients to boil in the pot, did this include the ginger bug? If it did, then boiling is what killed it, so no carbonating will happen. Are you using metal (to stir it, store it, etc...) if so, switch to plastic, wood or rubber equipment...ferments don't like metal. Does your Britta filter remove chlorine? If there is chlorine in the water, that could be the reason. If you leave water out for 24 hours the chlorine gets removed.

    Hi I'm making ginger bug for the first time. Though it taste ok but the color is orangish. Its 45 degree centigrade here in india where I stay. Also on the first 2 days it was very sunny but its cloudy at now. I'm in the 4th day of ginger bug. Please advise if my bug is ok. It is fizzy too. Thanks in advance.

      Hi! Everything seems right except for the orange colour. Usually this is a sign of spoilage but maybe sometimes it’s normal. It has never happened to me. I would start over just to be safe. I hope this helps!

      The sea salt is optional. Some recipes call for it as a flavor enhancer, the same way it's used in baking. I add it to my sodas because I feel it boosts the flavor a bit, but it is not necessary.

      Ginger bug sodas taste best if you drink them within 3 days...then they start to over ferment and lose their sweetness.

      Sorry to hear! Yes, I would say at this point it likely won't happen. Was your ginger bug well fed & bubbly when you added it? Was your wort cooled? Did you use the full amount of sugar in the recipe (not less)? Are they in a nice warm place? And last, were your bottles nice and clean and very well rinsed? Only the slightest trace of soap left behind can kill ginger bug...maybe use vinegar to wash bottles instead. Let me know how batch #2 works!

      If it is very warm where you live, it might have bubbles after 2 days. But it can take up to 7 days even longer, so don't worry if it hasn't happened yet.

      I cannot tell you the exact amount, but the ginger bug consumes a great deal of that 1/2 cup of sugar. This means it ends up being much less (a mere fraction) sugar than a conventional can of ginger ale. I hope this answer helps :)

      Only as often as I make soda, about once a week. If I don’t make soda for a long time I pour away half of the ginger bug-with a lot of the solids-and replace it with more water, ginger and sugar. Then wait until it bubbles again. How much depends on how much you use...you replace it with the same amount. I hope this helps :)

      Does it still bubble? If not, dump half away and add more water, ginger and sugar to make it full again. See if it gets bubbly within one or two days and if not, you will have to start over again :)

      Yes it is quite bubble, and there is too much gas in the bottle, like the cold cola bottle. The spunk is coming after opening the bottle lid

      When you put it in the fridge, it will slow down the bubbling and shouldn’t pop when you open it. The best way to know is to taste it. I would chill it and try when it is very cold. If it tastes good then it is fine :)

      It should not be slimy. Is it at least bubbly? My sodas have never gone slimy, so I am not sure why that happened. To be safe, I would throw it away and try again.

    My ginger bug is very murky. I used grayed ginger mostly perhaps I should stay away from that? Also your ginger bug in the cola video was incredible, mine is not there yet. I'm making my first batch of ginger ale tonight!

      No, it does not. If you let it sit for too long though the ginger bug will eat all the sugar and you will end up with something like alcohol, but not quite :)

      How long has it been sitting? Are you feeding it more ginger & sugar each day? Is it in a warm place? It takes 5-7 days for it to become bubbly. Also make sure that the lid is slightly open so it can breathe. I hope this helps :)

      My best advice is stop feeding it and give it a chance, just let it sit in room temperature undisturbed with lid loose, even if it's a little cool. sounds like it has lots to eat, it just hasn't had chance to ferment. Sometimes it can take longer if it's cool. Hope it helps! :)

      hello, my Ginger bug turned out fine. he's right, it has a lot to eat so it's kind of slimy and don't have bubbles. i used it twice already and it's good. I'm now happy 😍 .
