    Shalgam Ka Bharta
    Preparation time 10 minutes
    Cooking time 20 minutes
    Serves 02
    Ingredients:
    For Bharta
    ¼ cup Ghee, घी
    4-5 Turnips, peeled, keep whole, शलगम
    7-8 White part of green garlic, हरे लहसुन
    ½ tsp Turmeric Powder, हल्दी पाउडर
    ¼ tsp Degi Red Chilli Powder, देगी लाल मिर्च पाउडर
    ½ cup Water, पानी
    Salt to Taste, नमक स्वादअनुसार
    For Tempering
    1 tbsp Ghee, घी
    1 tsp Cumin Seed, जीरा
    1 tbsp Fresh Cream, क्रीम
    For Achaar
    1 cups Turnip’s Skin, julienne, शलगम
    ¼ cups Green Garlic, julienne, हरी लहसुन
    2 tbsp Green Garlic Roots, chopped / हरी लहसुन की जड़े
    2 tbsp Mustard Oil, सरसों का तेल
    Salt to Taste, नमक स्वादअनुसार
    ½ no Lime Juice, नीबू का रस
    1 tsp Red Chilli, crushed / कुटी लाल मिर्च
    Process
    For Bharta:
    1. Wash and peel the turnips and keep aside the skin for achaar.
    2. Now in a cooker add ghee let it heat and then add the peeled turnips and saute it until light golden brown.
    3. Turn the flame to low and then add white part of green garlic saute for a minute and add turmeric powder, degi red chilli powder mix and add water.
    4. Add some more ghee and salt in it, close the lid and give it a nice 4-5 whistles let it cool down and open it.
    5. Once cooled enough start mashing the cooked turnips, mash it into a proper mixture and even texture.
    6. Heat another pan add ghee, cumin seeds and let them splitter then add mashed turnips saute for a minute and then add some cream in it and mix properly.
    Bharta is ready to serve. Enjoy it with prepared achaar, white butter and bajre ki roti.
    For Instant Achaar:
    In a mixing bowl add turnip skin, green garlic, green garlic roots, mustard oil, salt, lime juice, crushed red chilli and mix it well.
    Keep aside for 10-15 minutes and the achaar is ready to serve.

    Since moving to US 6 years ago, i made this sabji today.. it reminded me of my bibi (grandma) and my pind (village), and brought back so many childhood memories.. it is not just a recipe, it is a trip down memory lane of time when food and people were simple and life was full of laughter, love and good health ..!!

    Shalgam is one of the best vegetable ... I remember my grandmother use to make kachri ( dry shalgam ) and later we use to boil it and make soup from that... And Shalgam saag with moth ki daal.. I am looking for that recipe.. Ranveer sir please share more dishes of shalgam

    Shalgam apne aap me hi gazab ki sabji hai i love this vegetable..winter me matar, shalgam, thoda sa alu dalkar pyaaz ,tamatar Hari mirch aur halka sa garam masala ka tadka lagakar sabji..laazwab lagti hai..chache dry vegetable ya bilkul latpati si sabji..amazing taste with daal rice ya plain paratha

    Hello Ranveer ji. My mom used to make Shalgam and I always enjoyed eating it. This lockdown season forced me to buy turnips as most other veggies were already bought by people. I never used to buy turnip, but maine le liye ki banaate hai. I followed your recipie and it was amazing. I also shared with my mom. And you were right, when I was peeling turnips it smelled a little pungent like the raddish. But banne ke baad mast si meethas aa gayi. I just tweaked a little bit. Jeere aur ghee ke tadke ke samay halka sa garam masaala daala aur fir shalgam ko cooker se nikaal ke mix karke paka liya. Bahut hi umda bana tha. Thanks.

    Hey Ranveer, thanks for sharing the new style of cooking shulgum. Though, I was cooking my nani recipe which is like: chopping the turnips in small peice and adding ghee + tadka of cumin seeds and finely chopped tomatoes (adding default ingredients as turmeric, grinded coriander red & green chilies + salt)and adding the sugar to enhance the sweetness. Cook it on slow flame for 15-25 mins then mix it very well and when cooked in the end add some green coriander leaves. I'll try yours and can you share your feedback on my nani's recipe?

    Ranbeer ji main kabhi bhi shalgam pasand nahi karti thee. Hamare hostel main jab shalgam banate thei to uski smell mujhe achchi nahi lagti thee. Lakin jaise aapne shalgam banaye hai maine bhi banaye bilkul vaise hi vakai bahut tasty bane. Thank you souch aapne mera shalgam ka taste bana diya.

    My mom's recipe..cut.shalgam boil with salt nd turmeric...for tadka,
