My dad was a Naval Flag Officer and, when he was home, my parents were obligated to give cocktail parties. A variation of this recipe was one of my mom's mainstay canapés. In addition to the onion and mayonnaise, her version used extra sharp cheddar cheese, a few dashes of Tabasco (or other) hot sauce, and lots of coarsely ground black pepper on small crustless squares (cut each bread slice into 4). She toasted one side of the bread, added the cheese mixture to the other side, then broiled the tops until they were bubbly and deep, golden brown. They were crunchy, unctuous, and _delicious_ and a perfect compliment to mixed drinks. Thank you for posting this recipe, Tom and Melissa.
@@chogan201 I think my mom's recipe had a higher ratio of grated cheese to onion. So, hers were more a hot and bubbly cheese/onion bite than an onion open-faced sandwich with some cheese, if you know what I mean. 😊
I have been making these for 30 years. If you toast your bread lightly before spreading on filling, they are more sturdy. Then put on spread & run under broiler. My family loves these. They make a great appetizer on cocktail bread loaf, too.

I like to use cocktail rye bread or pumpernickel cocktail bread. One of our favorite recipes. I only use mayonnaise and diced onion , spread it on the bread then top it with a small square of cheddar. Then under the broiler until cheese is melted. Yum

When I was growing up, I never ate lunch at school. When I got home, I would use a cold piece of cornbread or biscuit and make an onion sandwich with mayo on it!! I would definitely eat this at my current age of seventy!!

I like just a slice of onion on bread and salt and pepper. So good. Hubby likes taking an onion and scoop a little of the top of the onion out and put these in a dish and put butter on top and do in the microwave till done. So good. Have you noticed that the bread slices are smaller than they used to be.

Never had this before, but I love anything onion, so can't imagine that I wouldn't love this. I guess I get that from my folks. They were both big onion eaters. In fact, my dad had a habit of going into my grandmother's garden and picking an onion or two, giving it a quick rinse off, and then eating them right there.

I'm not a mayo fan also. I like the idea of cream cheese. I do make a mayo inspired spread with tofu, so I may try that. I'm also thing maybe blended cottage cheese
I’ve also used minced onion from a jar, good to let it sit awhile. I usually just cut square bread with the crest off into fourths put into oven for a few minutes to crisp and use them as small horadores. Sorry can’t spell the last word.
I think I would use thinly sliced french bread(comes sliced at walmart $.99), finely chop or grate the onion and add a teaspoon of better than bouillon (beef flavor), use a little butter instead of mayo if you don't like mayo, forget the paprika , and top with candied bacon. Broil. Tom always says make it your own.

We were poor, too, and did that too, and added mayo. Mama made biscuits every morning, so we always had a few left over. Very good.

I think this would be really good made with whipped cream cheese in place of mayonnaise. Miniature bagels would also be great in place of bread.
