Hi Ben, I can be tough not having enough hour's in a day work life home life has got to take priority . you will get there in the end it will take time, bricking up your garage door will be a good thing to stop the drafts, I have seen a lot on you tube that people are using rock wool to insulate the workshop and going over with plaster board or ply may be OSB .

Thanks mate, definitely a challenge juggling it all but it’s healthy to have different passions.
I’ve looked at rockwool and it’s good stuff but it’s all really pricey so will just maybe be a case of doing one wall, then something else and doing another wall later on etc until it’s all done.
