I use my gamesaver silver Foodsaver and mason jars to vacuum flour, sugar, salt, any powder items. Before putting the lid I crunch a dry coffee filter for the inch headspace and make sure the glass rim is clean dust free and well covered and my machine never has gotten damaged!
Tip from an Amish mother to a daughter who cans a lot: Cut plastic on your jars' box 2" below,,,but still...along the 'top' cardboard egdges on 3 sides. Peel back, load jars and fold plastic back over tops for a dust cover...holds with no tape (which we might not have if in a situation--to spare). Great tutorial. Keep 'em coming!!
21 years ago when I was pregnant with my daughter a friend gave me a dehydrator. I dehydrated some mixed veggies stuck them in some old jars that I had saved and into an old fashioned wooden bread box and forgot about them. I didn't even know about oxygen absorbers back then. We moved several times and I never got around to opening the box with the bread box in it until about 5 years ago when I was cleaning our garage. I found the veggies and they looked fine so I did an experiment. I made soup. It came out just fine. My husband was shocked when I told him he was eating 15 year old vegetables. The shelf life of dehydrated foods is incredible. So now I home can my meats and dehydrate my veggies for long term. I would like to be able to afford freeze dried meats but they are not in my budget. I haven't had great with dehydrated meats with the exception of ground turkey. I love the turkey rocks for tacos, chili etc. I have never had it go rancid on me.

I have used up to those half gallon size wide mouth mason jars to store even dry oatmeal, cornmeal, just about everything and have been doing it now 5 years not a single time has my Foodsaver gotten damaged as long as you cover that inch headspace with a coffee filter!
Take a copy of instructions and paste it on Avery Labels of the large size and list date and name of item and there is no problems with identification, I always rince my jars incase glass chips are inside from manufacturing and then put them in an oven upside down and take them to 300 degrees turn off and cool they are now sterile.
He said he just cut the bag open and the jars and put the stuff right in there. I personally would wash them and make sure they are clean both inside and out. But they are his jars I guess and if it hasn't killed him yet, it won't.
What I don't like is when you are canning anything, jars NEED to be sanitized! I steam bath mine for 10 minutes, oven dry at 220 for 30 Minutes, and then they are ready for product. Which I also sterilize depending on the product. What I do like is the idea of (after sanitation) the jars are put back in the box and taped up. This makes storage much easier. Thanks for the idea.
keep oily fingers off top of glass jars. close absorbers bag as quickly as possible, the indicator will show you how fast they are absorbing air. they turn black very fast.

if you put your flour into a paper lunch bag you can use your food saver to store flour in a bag. It works quite well. Or you can dry can it in the oven.

I put a paper cup cake paper in the top and was able to vacuum pack with food saver because I didn't have the oxygen absorbers. (have them ordered) WHAT,,size did you put in the jar?..... I found one just like it at Walmart about a week ago. It was less than $2.00! It was in the section with spatulas, whisks and kitchen utensils. Now, in the section with the Ball canning jars, they had them in a set, but much more expensive.

Well I've been makin rounds here on the potato flake storage demos. I bought a bunch but they have some oil in it (which I hadn't expected at all) Now I find you're not supposed to put oxygen absorbers in w/ something that has oil in it bc it apparently causes lethal botulism! 😳Do y'know if I put silica gel in there, would that suffice? I need to get em stored. I just assumed potato flakes would be dry as dust, but No, there has to be oil in it.
hi.....this is a new one on me....we started packing a silica pack along with an oxygen absorber in our storage items. I will have to do some research on this. I would only do pure potatoes if you can for now.
another note, you can put the potatoes in a Mason jar for now and vac seal using a food saver, no oxygen absorber....you can store for a while until you can learn more...hope this helps....
Hi, not sure about oven canning.... look on ebay, or just use an oxygen absorber, it will work just fine ! and i do not recommend oven canning, it does NOT get all the oxygen out, it just creates a small vacuum due to the different temps. TY!

Not a problem with the cool = Menopause , Dry = thank you Jesus but now Dark I have turned 1 of 2 spare bedrooms into storage = 1 less kid to come back . Our sams club only has the idahoan real premium mashed potatoes not the original . The real p has milk in them does this matter with vac sealing ? I really do not understand this because you have to add milk and butter to the rp but not the original !

As I understand the pancake is 5+ yrs. the hashbrowns 10 yrs. spices 3-5 yrs.+ according to customer service @ Tones Spices! Am I understanding LDS guidelines and you on all other items I have stored should have shelf life of 20-30 yrs. Is this right ?

Ewwwwww! You did not wash and sterilize those jars. That is just nasty. It is impossible to take you seriously when doing a how to video on food preservation and you do not even know that you need to wash and sterilize the jars first. Smh!
@@technician775 It's amazing how many folks don't understand that clean jars are usually enough when preserving foods. That in a dry environment there's not enough moisture for microscopic life to grow. That when waterbath canning, the canning process, itself does the equivalent of boiling jars in water before filling them. Further, using a pressure canner is the equivalent of using an autoclave to actually "sterilize" the jar interior and contents within the jar. One example of many to illustrate: Raw pack canning chicken. All raw chicken is to be considered contaminated with Salmonella. To "sterilize" jars before putting raw chicken into "sterilized" jars is a waste of energy and prep time, IMO.
I did some in food savor bags 2 years ago they were still air tight but they turned brown did I do something wrong? But I still cooked some and tried them and the taste was just the same as when I packed them,,just color was off, has this happened to anyone else? Muchlove🌹

The lack of oxygen in the jar will kill any bugs, and eggs aren't going to hatch. When you open the jar to use the product, it is the same as when you first bought the package and used it.
Once the mason jars are open, what would the shelf life be on them? Also, say for example, 10 years later you open a Mylar bag of rice that had an expiration date on the bag of 5 years ago, how soon would the rice need to be eaten before it goes bad? Instead of storing rice in a 5 gallon bag, would it be better to store it in smaller bags so it lasts longer?
Late reply that may help someone. When you open a jar and remove some of the contents, re-seal the jar, if you believe it will be a long time before you use the rest of the contents. Further, white rice, beans, grain, pasta, for example, properly stored have a 30 year shelf life. Bags of rice from the store do not carry an "expiration date". Most of them say "Best By" date. Meaning that over time the product loses some vitamin content. There may be color and flavor changes, depending on the product. In the case of rice, beans and etc. the older it becomes, generally the longer it will take to cook it. There are no legal regulations on how these dates are used, except for baby food. Thus, producers can use any date that meets the needs of their legal and marketing departments goals. For example, a can of green beans is safe to eat, as long as the seal isn't broken. Stored in a cool, dry, place a can of beans will remain safe for many, many years. Yet, those "Best By" dates don't reflect that. Personally, I prefer to use jars sized according to how much I expect to have on hand and usage rate. High volume items, such as rice and dehydrated sweet corn, I use 1/2 gal mason jars (64 oz). I also use quarts (32 oz), pints (16 oz), 1/2 pints (8 oz-1cup) and jelly jars (4 oz). The last one for small amounts of powdered spices and such. Prefer to leave ingredient whole, where feasible/practical, and grind as needed to prolong shelf life. Each size is selected based on how long I expect it to take to empty it in normal circumstances. If I anticipate a problem using the product timely, it's easy to re-seal, using O2 absorbers, FoodSaver vacuum, or even the FoodSaver Lid attachment with a brake line bleeder from Harbor Freight, in a grid down situation. (Google brake line bleeder vacuum sealer for more info) PS: Over the long haul, jars are more economical than single use storage bags. They can be reused numerous times for both short and long term storage. FWIW.... I'm still using mason jars that I purchased back in the early 1970's. PS 2: Mason jars are insect and rodent proof. Rats can chew through plastic totes and buckets. A squirrel(s) stole a tote of black walnuts (in the shell) by chewing through the side of the container that I had on the backporch.
Great. New canner. You said you just cut the top off the jars. You said nothing about using sterilized jars. A year ago I did what this video days. I didn't sterilize the jars. So now I have to get rid of all those jars cuz they might have botulism????!!!!! I'm pretty freaked out about now!

For sanitary reasons, I would advise everyone to wash out the jars before using them, even if they are new before putting food in them.

Careful canning dehydrated food. Moisture content has to be below 10% (?) or the food could get botulism.
have you ever thought of placing a cupcake liner ontop and then vacum seal the jars thight. my grandma did it all the time with powder items

NO No No. Never touck absorbers with your fingers. use rubber gloves to keep your oils off.

I always wash & dry jars well before using
coffee filters work well instead of the paper towel...they have the bonus of being round and fit in the jar easier.

New Mason jars are about a buck each. A costly storage system for a fairly cheap food. Mylar bags would be more cost effective.

I see that as long as the jars are back in their cardboard cases, then you can stack the full cases
I would use the food saver bags since the bottles are so expensive. Then box them up with several layers of foils to deter the critters.
Just the opposite in the long run.

Ewwwwww! You did not wash and sterilize those jars. That is just nasty. It is impossible to take you seriously when doing a how to video on food preservation and you do not even know that you need to wash and sterilize the jars first. Smh!

@@technician775 It's amazing how many folks don't understand that clean jars are usually enough when preserving foods. That in a dry environment there's not enough moisture for microscopic life to grow. That when waterbath canning, the canning process, itself does the equivalent of boiling jars in water before filling them. Further, using a pressure canner is the equivalent of using an autoclave to actually "sterilize" the jar interior and contents within the jar.
One example of many to illustrate: Raw pack canning chicken. All raw chicken is to be considered contaminated with Salmonella. To "sterilize" jars before putting raw chicken into "sterilized" jars is a waste of energy and prep time, IMO.

I did some in food savor bags 2 years ago they were still air tight but they turned brown did I do something wrong? But I still cooked some and tried them and the taste was just the same as when I packed them,,just color was off, has this happened to anyone else? Muchlove🌹
The food saver bags will leak oxygen over time (I know), they are best used in the freezer to stop freezer burn.

what size oxygen absorber did you use for potato flakes in a quart jar???? Would you use the same for white rice?

how do you sterilize your jars before you do this? Do you do the oven method or water bath. and how long do you what after sterilizing do fill them? getting lots of contradictory information on all the sites I have been viewing.
I suggest sterilizing the jars before use and depending on what you are packing, is what method i use. i NEVER use the oven method of canning. TY!

For the flour in the jar using the food saver, may be put a coffee paper on the top of the flour (fold in the top) ??

Should the potatoes be put in the freezer or oven dried to kill insect eggs?
The lack of oxygen in the jar will kill any bugs, and eggs aren't going to hatch. When you open the jar to use the product, it is the same as when you first bought the package and used it.
can i just put the instructions on paper inside each jar? Im not going to use them that fast. will it hurt the food?

Once the mason jars are open, what would the shelf life be on them? Also, say for example, 10 years later you open a Mylar bag of rice that had an expiration date on the bag of 5 years ago, how soon would the rice need to be eaten before it goes bad? Instead of storing rice in a 5 gallon bag, would it be better to store it in smaller bags so it lasts longer?
Late reply that may help someone. When you open a jar and remove some of the contents, re-seal the jar, if you believe it will be a long time before you use the rest of the contents. Further, white rice, beans, grain, pasta, for example, properly stored have a 30 year shelf life. Bags of rice from the store do not carry an "expiration date". Most of them say "Best By" date. Meaning that over time the product loses some vitamin content. There may be color and flavor changes, depending on the product. In the case of rice, beans and etc. the older it becomes, generally the longer it will take to cook it.
There are no legal regulations on how these dates are used, except for baby food. Thus, producers can use any date that meets the needs of their legal and marketing departments goals. For example, a can of green beans is safe to eat, as long as the seal isn't broken. Stored in a cool, dry, place a can of beans will remain safe for many, many years. Yet, those "Best By" dates don't reflect that.
Personally, I prefer to use jars sized according to how much I expect to have on hand and usage rate. High volume items, such as rice and dehydrated sweet corn, I use 1/2 gal mason jars (64 oz). I also use quarts (32 oz), pints (16 oz), 1/2 pints (8 oz-1cup) and jelly jars (4 oz). The last one for small amounts of powdered spices and such. Prefer to leave ingredient whole, where feasible/practical, and grind as needed to prolong shelf life.
Each size is selected based on how long I expect it to take to empty it in normal circumstances. If I anticipate a problem using the product timely, it's easy to re-seal, using O2 absorbers, FoodSaver vacuum, or even the FoodSaver Lid attachment with a brake line bleeder from Harbor Freight, in a grid down situation. (Google brake line bleeder vacuum sealer for more info)
PS: Over the long haul, jars are more economical than single use storage bags. They can be reused numerous times for both short and long term storage. FWIW.... I'm still using mason jars that I purchased back in the early 1970's.
PS 2: Mason jars are insect and rodent proof. Rats can chew through plastic totes and buckets. A squirrel(s) stole a tote of black walnuts (in the shell) by chewing through the side of the container that I had on the backporch.

Great. New canner. You said you just cut the top off the jars. You said nothing about using sterilized jars. A year ago I did what this video days. I didn't sterilize the jars. So now I have to get rid of all those jars cuz they might have botulism????!!!!! I'm pretty freaked out about now!
