"Chilled during the summer!!!" What a great idea. As I sit here in cold and overcast Vancouver, British Columbia, a hot bowl of Creamy Almond Soup seems so comforting. Then again, a chilled almond soup for a hot day seems like the perfect comfort to sit and "chill" for the afternoon. Guess what! Today i finally made canapés! Bread, cream cheese, mashed sweet potato, with red onion and a leaf of mint on top. I also made shrimps with herbs for the main course.

We have so many almond all over our chemins here and three trees in our garden, so I’ll make this! Thanks!! Also w3 have several neighbours with chickens so we have plenty of fresh eggs here. Regarding the garlic: Put the unpeeled cloves in a jar. Screw the lid on. And shake it. This makes it easy to remove the peels.
This looks amazing. I spent some time in Andalusia and was surprised to find several dishes were served with a hard boiled egg just like this soup. I wonder if that is specific to that region. Thanks for posting yet another interesting recipe to make.

I love Gazpacho and soups in general. This looks like a very tasty soup, which I will try out. However, I will have to use almonds with the "peel" on, as we dont get almonds without "peel" in Switzerland. I hope that this is okay ?

Albert, do you have a source for this that is medieval? I would love to be able to document it for use in my reenactment group, at feasts!
A lot of Spanish recipes that have no new world ingredients, such as tomatoes, bell peppers and potatoes are considered medieval recipes :) Much love
Were those marcona almonds? Those are difficult to get, and pricey, but so much different then the usual kind found in most grocery stores in the US.
